I'd love to see more of this idea - you and another chef go out and catch some stuff, and then you each make 3 dishes with what you caught. No time limits or anything, just fun. Have a couple judges and see who won. I think this would be a fantastic series.

Interesting to see rambutan there. It's quite popular in Indonesia. Good rambutan should be more sweet rather than sour. Like good grapes.

Chayote can be used to make Hawai’i style “pickle mango.” In Louisiana it’s called merliton and there are a lot of cajun recipes.

If you throw the collar and the jaw of the tuna you’re missing something great, we usually marinate it with soy sauce chilli and lemon if your in tropical countries we had kalamansi a type of lemon with a punch, and then grill it in direct flame and make a dipping sauce with kalamansi soy sauce chili and diced or sliced thin onion. Superb

the chayote, you use it like a daikon radish in soups or batonette cut them and stir fry(could be mixed with scrambled egg, noodles, shredded tuna, sardines with tomato sauce or whatever u like, like the guy said, it will taste like whatever you put on it). For the best texture experience though, make sure you half-cook it whether using it on soups or stir frying it, if gets overcooked, it will get mushy

We called those green pumpkin like vegetable a water pumpkin in Indonesia. Very mild. Just by boiling them is very good by itself. Mildly sweet, very gentle taste. Alternatively we do stir fry with thinly sliced carrot, seasoned with salt, chicken stock (very little) and sugar

That fusion of Latin and Japanese "nori-tostada" was fire. Considering Jocelyn's Latin background, I'm surprised Taku didn't know about chayote squash. Of course, in the U.S., the chayote are more pear shaped instead of elongated as shown here.

First of all, I can confirm that the Sierra Mackerel is indeed an amazingly delicious fish. I like it better than tuna and snapper and SM tastes even better if you catch it on the fly! I'd also like to say that while I don't judge people for eating octopus, I think they should at least be made aware that they might be eating the smartest animal in the ocean.
