@@markmower6507 I would look into why sushi is (generally*) safe to consume raw. There are quite a few safeguards. * Generally safe in the US, as in the sourcing matters. I would likely say a place like this is just fine. In places like Japan, getting sick from sushi is basically a non issue. Even pregnant people consume it like any other food.
@nick_at_nite5 ай бұрын
You obviously have never tried good sushi. Granted, toro is significantly more expensive in US than it is currently in Japan even with a still strong but sinking Dollar/Yen exchange. More importantly, UA's street cred just jumped dramatically by zeroing in on the toro in that menu! But, I question that NJ restaurant's ability to produce GOOD rice fitting for toro as well as using proper wasabi. So for that restaurant, it was overpriced. LA has much better toro for $20/2.

Great review. When cooking at home, the general advice now is to pre-season the steak and let it absorb the salt so it's uniform. I prefer to not do that and rather add some salt in the end like you're doing with the finishing salt here. The contrast with just the meat flavor with the spark of salt and the texture. This steak looks perfect - they care about what they're making.
