My mother passed away 18 years ago but she was well known for her hominy. I have a picture of her standing next to her giant black kettle over a fire stirring the hominy wearing a straw hat. People came from all around to get one of her famous jars. What wonderful memories! Thank you for the reminder! 💞

My Dad grew up in Ohio. Born in the early 1920's, his family was "well to do" and had a cook by the name of Stella. There are many wonderful stories about Stella. ANYWAY, Stella was from North Carolina and fed my father's family her own culture's food. So, my Dad grew up on grits, beaten biscuits, collard greens, chitlins and other African American Deep South foods. Stella was retired by the time I was old enough to know her well, but she insisted on preparing important family meals. She would sit in the kitchen on a stool made for her and direct her niece in the cooking. Everyone in the family did was Stella told them to do. Having eaten grits made from nixtamalized dent corn, I can tell you that there is no comparison to the prepared grits found in the grocery store. None whatsoever. We always had it as a savory side dish rather than a sweet breakfast food. My favorite was a bit of butter with salt and black pepper.

@@RoseRedHomestead I asked her for her biscuit recipe, and she asked me if I would be baking on a rainy day. She did everything by feel. I believe she used wood ash, but don't quote me. I can't wait for your videos! I always learn so much from them.

This is called “good Southern food! My grandmother had a cook for a few years also. She taught my grandmother so many things about cooking. She also sent her ironing out to be done, because in those times everything wrinkled so much, which has nothing to do with corn, but this was going on at the same time.

As a Cherokee grandmother all I know is field corn nixtalmalized in the traditional way. It is a tried and true super food. We use it for tortillas, corn mush, hominy grits, hoe cakes, and added to fish cakes. The soaking process wakes up the corn and makes it easier to grind. I do something similar with all grains and beans, minus the lime process. Ezekiel bread really piqued my interest. I'm a firm believer and practioner of soaking and sprouting grains and seeds. Can't wait for acorn season!

Azure Standard sells organic yellow dent corn for $29 for 50 pounds. White is $22 for 25lb. I use the white for cornmeal for bread and tortillas. Maybe there’s a drop point near you. :)

What did you find it listed as? I only see seeds listed under out of stock, but not yellow dent corn 50lb bags in or out of stock is showing for me.

When I was a kid my papaw raised field corn. They’d use it for everything from livestock feed to cornmeal. Granny would even fry it when it was young & tender. It’s delish that way.

This type of corn is used in Mexico to make corn tortillas, and also it can be used to make tamales dough 😊❤️

Chin up Professor Pam! You have many, many years to go! My Aunt Jean Lived till a happy and healthy 103 years of age. Until her death, she led a Bible class and even an exercise class in her senior center where she lived. She passed in her sleep! What a good way to go! Think positive! You will outlast your next bag of corn!

A person has to ask that about any food we store. Corn has always been an important food source for thousands of years of Native American society. One just has to know how to utilize it. Thank you for explaining the different types and their uses.

We bought a bag of feed corn years ago and grew some. We use the corn for the chickens and the stalks/husks for the cows. If it comes down to it we will use it for us too.

Put a lot of bay leaves in it. It's prone to weevils. I have some too.

When the Spanish conquistadors came to South America , they took corn back to Europe, but they did NOT take nixtamalization with them. It ended up resulting in a lot of people developing pellagra (deficiency of niacin).

Looking forward to your future videos with hominy. I usually have leftover hominy after making pozole and have mashed it , breaded it and fried it like potato patties. You can top them with sour cream and Salsa! Scrumptious and affordable!

Nixtamalizing is the way to go for dent corn. The taste is fantastic. Sadly, the process takes a whole lot of water to rinse it correctly. Grits from nixtamalized corn are the best ever. You can also use the nixtamalized corn kernels while still wet, and run them through a meat grinder with a small extruder, then dry it and it makes a corn flake tasting breakfast cereal. Dust with powdered sugar and store in air dry container. :)

We grew dent corn last year for our chickens. The chickens are gone and we still have a 3 gallon bucket of dent corn. I'm looking forward to this new information.

Here in Missouri, what you are calling dent corn is what we call field corn. It is normally grown as cattle feed, but when picked fresh is good to eat as corn on the cob.

Thank you so much Pam, for the info on Amaranth! A couple of years ago, an Amaranth plant grew in my yard. I had no idea how it got there or what it was. I took a picture of it & sent it to a friend. She knew right away that it was an Amaranth plant. I didn’t know how to get the seeds out if it. And, one day I looked out the window & saw some doves pecking at it & at the ground. So I’m glad they had a nice, high protein meal! Thank you again, for sharing your knowledge of so many things!

We love to store corn, too! I can't wait to try the homemade hominy. I love posole soup with hominy in it. I buy my dried corn from Azure Standard and it's only $29.00 for 50 pounds. It is organic and non-gmo. You should check if there is a drop near you. It is such a great resource. Thanks for the wonderful video. You are such a blessing during these crazy times!

I’ve just recently learned how to nixtamalize corn and make fresh tortillas. Still working on getting the moisture and texture right but it’s nice to have that skill so I can know what to do with bulk stored corn

I got my corn from Azure standard, it’s about 30 dollars for 50 pounds. It’s organic too so it’s non gmo if that concerns you. I mostly make grits with mine, so satisfying!

Timing of this topic is so funny. I am working on my corn patch out in the garden today. I grow the same corn my Grandma did, Yellow Jarvis, an open pollinated dent corn. It makes outstanding hominy and the hominy dried and ground makes very good grits and cornbread. We Southernors are very serious about our hominy, grits and cornbread LOL. I also, of course, save a portion for seed for the next year. I cannot imagine a world where I did not store corn. I consider it as important as wheat berries.

I second that, as someone whose ancestors have lived in the South since before the Revolutionary War!!! Nothing better than cornbread crumbled into a glass of sweet milk!!! Before Y2K, when I was putting together my initial food storage, we sourced rice straight from the plant in Beaumont, and someone else sourced both yellow and white dent corn from somewhere in the Valley. I bought 200 pounds of each...in addition to my 200 pounds of rice and 400 pounds of wheat.

@@sandrarichardson2713 That's the only one! I know Silsbee! I don't remember the name of the place...it's been 23 years now. One of my first cousins lived outside Vidor and put me in touch with the place. (She grew up in Buna where her dad was Justice of the Peace for a long time.) We picked up enough rice for our entire church community in Central Texas...whoever wanted in on the deal...100 hundred pound bags at $18.00/bag. Those were the days!!!. My brother-in-law owns a cotton seed delinting business and drove one of his semi's down to haul it back for us. When I was in 10th grade, my aunt and my cousin's mom, my mom's 3rd oldest sister, was in the hospital in Kirbyville, dying of uterine cancer. My mom and I drove down to stay with her in that tiny hospital. I saw places I never knew existed in Texas...places like Cut 'N Shoot and Hoot 'N Hollar. 😀 Man....that's been almost 50 years ago now since my aunt died. Takes me back!

Hi Sue--I'm in the south as well. We go through lots of cornmeal as well and enjoy the white over the yellow. Can you share the mill you purchased for grinding the corn? I've looked around some but not sure exactly which might work for grinding corn. Thanks much and Jesus bless.

@@sandrarichardson2713 Hey, I did lots of research and I bought the nutrimill harvest in white. Their website will give you a 10% off coupon, but I bought mine through Amazon prime for free shipping. The nutrimill uses stones to grind. You can adjust to a coarser grind for grits and cornmeal. The metal blade grinders will only grind fine flours. Yeah grits!

Can't wait to get ahold of some of this special corn for storage! I read that the whole kernel popcorn you get at the supermarket is no good for long term storage... But now you've found the solution! Can't wait to watch your follow up videos! P.s. I started watching a documentary called King Corn. It is very insightful to the food industry when it comes to corn if anyone wants to learn more about it.

Oh my!! We just bought a few 50 lb bags for $9 a bag. You can also try feed stores or places like tractor supply for field or deer corn for much cheaper than she was looking at. We live in a state with a lot of farms & this farmer just advertised on Facebook. We had to drive 2 hours but we combined errands.

@@sunny4849 it is exactly as she described. She said that it is dried dent corn, also called field corn. She described everything about it in the video.

Deer corn still has husk material in it. It hasn't been chaffed the same way it would if it was for human consumption.

You must have come across Carol Deppe’s work with corn in your research. I read her book ‘The Resiliant Gardener” this winter and she goes into amazing detail of the types of corn. Several of the strains she developed and discussed are available from Adaptive Seeds. I have some ankle high right now! Perfect timing as usual 🙃

I'm so looking forward to the corn videos. Nixtamalization of my stored hard dent corn has recently been on my to-do list to try. I've got the lime and a manual corn grinder (plus electric meat grinder for my Bosch, if doing it manually is too difficult). Tortillas, tamales, hominy, and grits -- here we come! I'm sure your videos will be the thing to finally get me motivated. Thanks for your hard work in making the videos.

I did look up the heirloom corn once and was in the process of trying to find seed to order. Will certainly be excited to see your next installment on the 'corn saga.'
