I'm dairy free so I appreciate the vegan pancakes. I use Annie's pancake mix, which is vegan, and I use cinnamon applesauce instead of eggs and extra-creamy oat milk in place of milk. Then you get delicious apple cinnamon pancakes! Try it, I love it and I think you will too!

generally with pancakes you want to stir as little as possible while you incorporate all of the flour. the formation of gluten will make them a bit chewier and less tender. love the idea of stirring as you add liquid to get the consistency you want without measuring, but i would recommend stirring a bit less as you do this, as this will result in a wonderfully soft, pillowy pan-fried cake-with less developed gluten and a more tender crumb . between that and the burned cakes i'm also feeling a light 6 on this recipe. keep it up!

My pancakes are pretty similar to this but I add a bit of acid (lemon juice, apple cider vinegar, rice vinegar) to the milk in a separate bowl to make a vegan "buttermilk". I then add that to the dry ingredients. Adds a bit of flavor complexity and additional fluff without too much additional fuss. Give it a try!

I've perfected my vegan pancake recipe over the years. The secret is to 1. use buttermilk (1 tbsp vinegar or lemon juice per 1 cup of soy milk) and 2. prepare the batter the day before and let it rest in the fridge overnight. I also like to add a bit of freshly grated nutmeg.

I recommend you put a lid on the pan while it’s cooking before doing your flip. That way the flip will be much easier as the pancake will already be more consistent. It will also help cook it a little bit faster

As an Aussie who makes her pancakes the way her Pom Mum does (ie: throw all ingredients into a blender and puree then pour from the jug and while still liquid pick up the pan and rotate it so the batter spreads to an almost crepe thinness) I will not follow this recipe ever. Mr. Fantano... don't use metal on metal. This could damage your cooking wear. I recommend a plastic or wooden flipper. Hope that helps.

Food tip: if tou have the oven set as low as possible you can sloghtly undercook the pancake in the middle and then put them in the oven as the other ones fry. The more you cook the further you'll need to cook them a little further each time as the oven time will decrease as you get closer to meal time!

You should opt for the too wet headache because overmixing makes them much less fluffy and tender, you don't want to create a lot of gluten by overworking that flour, and you don't want to activate all of the baking powder and then beat the air out. Even overshooting the liquid and maybe reserving a few spoons of the dry-mix before you add in the wet so it comes together quicker. I hate to backseat, but if you try this I promise they'll come out better. Result did look great though, pan a tad hot, but I'd tear em up!

The one tip I got for flipping pancakes at the right time is to not only look at the edges to see if they're solidifying a bit, but to watch the bubbles around the edge. Once they've popped, they're ready to be flipped over. But I've also burned pancakes that way lol, usually only near the end of a batch of pancakes.

Maybe you could reduce the spontaneous blackening of the pancakes by not adding the maple syrup? I think the sugars are burning way faster than just the other ingredients would. Got me going for some american style pancakes though, these do look fluffy

flax also is great for low carb, good stuff. great source of fiber. i kinda find it miserable in shakes and drinks (like smoothies... don't add flax to smoothies, there's no reason imo), but in pancakes, baked goods, as a binder (actually good for using in meatballs and other meat things where you would want breadcrumbs... besides breading itself). idk good stuff.
