Steamed layer cake recipe:
Ingredients:
White batter:
100g sugar
150g tapioca starch
18g cake flour
a dash salt
250ml water
120g coconut milk
1/2 tsp vanilla extract
1/4 tsp vegetable oil
Yellow batter:
100g split mung beans, soaked
200ml water
a dash salt
110g yellow sugar OR raw sugar
400g coconut milk
1/6 tsp salt
80g tapioca starch
13g cake flour
1/2 tsp vanilla extract
1/4 tsp vegetable oil
2 drops of yellow food colour (optional)
Green batter:
70g pandan leaves
310ml hot water
80g sugar
120g tapioca starch
15g cake flour
a dash salt
1/8 tsp pandan flavouring
1 drop of yellow food colour (optional)
1/4 tsp vegetable oil
Round mold: 20cmx5.5cm
Layer: 1, 3, 5, 7, 9, 11, 13 steam for 3 minutes.( Reduce white batter by 1 tablespoon, add 1 tablespoon green batter after each layer.)
Layer : 2, 4, 6, 8, 10, 12, 14 steam for 4 minutes.
Layer 15: steam for 8 minutes.
