I made it today. Next time i will omit the lemon rind and cut the sugar to 3/4 cup and make 1 tsp of good almond essence. I like the marzipan taste for this cookies. Thank you for this awesome cookies.

You can use a tablespoon of water that you cook chickpeas in for each egg. As the chickpeas cook, protein seeps out into the water. Or, you can soak some flax seeds in water for a few minutes and use a tablespoon of that too. And, you can use mashed bananas instead of eggs, or applesauce.

Hi Andrew! I do whisk the egg whites when I make other almond cake (like my almond tart 👉🏻 kzbin.info/www/bejne/hKi1o5Roa9KVe5I) when I want the almond part to somewhat soft.These pasticcini are meant to be dense and moist. So no need to beat the eggs!... it saves some time too 🤣
