I really like how u compliment people when you are reviewing them :) Its lovely. Honestly I had a time before I was into my career that I didnt have much money I was using a very similar method to make very cheap lasagna and ziti etc. Even getting my cheese from a local farmer, making my pasta, making my own sauce from the cheap tomatos from the farm(the ones that had slight imperfections were almost free) I also fwould mince or braise the scrap cuts of meat etc. The things we do in college right? People didnt know it was because I didnt have much money. They thought I was being creative LOL . I enjoyed your video :)

Agreed! Béchamel sauce is far better and cheaper than ricotta! I think that grating some nutmeg into the butter for the béchamel adds to the dish!

@@gambitgaming7725 in my experience in the U.S. yes it's almost guaranteed to be ricotta cheese with a layer of cheese ontop aswell. Of course immigrant families whether first or 4th gen would most likely be authentic. But Italian-American cuisine and god forbid.. the "restaurants".. are a far cry from authentic. ESPECIALLY southern U.S.

@@KayElayempea bechamel is really easy to make. just butter,flour,milk and then cheese and seasoning to taste. You have to use real butter for sure though(butter goes in first,then flour to make a dough,then let down with milk), it doesnt work so well with margarine or that typre of spread Use the real thing and add salt if using unsalted butter,And use low heat when adding the milk.Good bechamel will be like double cream thickness, make slightly runnier if using dried pasta as the moisture gets soaked up. Whisk often to make sure of no lumps either!.

hi Vincenzo! watching from Reggio Emilia here! i wont comment on the ricotta or mozzarella 😉...we make the green lasagne dough with spinach inside...have you ever tried the final layer being the actual pasta? it seals the lasagne and gets crunchy and toasty in the oven....the real treat... try and enjoy! ❤

great video, loved your commentary! in south africa we hardly ever use ricotta, and i've never seen it in lasagna. if the white sauce with flour, butter and milk is "bechemal", then that's what i make. for cheese i mix white cheddar, white gouda and grated parmisan. must have cheese on top :)

I bought my mom a automatic pasta maker , and my dad happend to buy her the stand mixer attachment for pasta , she uses the machine to mix the ingredients then the Stan mixer to flatten and shape it , comes out absolutely beautiful

Hello Vincenzo, I just want to address something about the ricotta. Nadia Caterina Munno known as the Pasta Queen, mentioned that in the south of Italy lasagna is usually made with ricotta instead of bechamel sauce. I read that majority of Italian-Americans today descend from the south of Italy (Abruzzo, Calabria, Campania, Puglia and Sicily) and that probably influenced the use of ricotta instead of bechamel in America.

Ciao! Grazie for sharing that insight! It's fascinating to think that regional variations influence Italian cuisine, don't you think? Either way, both ricotta and bechamel sauce are a great addition to lasagna. It still holds it's unique flavour. I think it all lies now in personal preference.

I like Nephew Josh’s lasagne recept. But I prefer to use bechamel sauce instead of the ricotta, and I would always start with the Italian soffrito when cooking the ragù, and always use extra virgin olive oil for Italian dishes.

I agree on the ricotta, it has that weird almost bitter aftertaste. However, I guess he is going for the cheesiest/creamiest version for the least amount of money. I would eat this. However, I will stick to my parmigiana and provolone.

Every Italian American growing up in Bklyn.NY with me used Ricotta cheese on their lasagna, we never even heard of bechamel, all our parents and grandparents were mostly from Naples,Sicily, Puglia, Bari

@@letsgomets002 Italian Americans are as much Italians as the Cubans in Florida. Over the generations it has become quite comically bastardized on a lot of levels. I don't particularly mind "Italian-American" being its own thing in terms of cuisine but they usually have the "let me teach you how Italians do it" mentality when they're, ironically, usually further from the original Italian than the average american. Perfect examples: Language - they assert "mozzarella" is wrong and call it "Muzarel" or even just "muz" Food - they shove garlic into everything when it doesn't belong in most Italian recipes, it's probably why the average american thinks Italian = garlic everywhere.
