You can’t criticise him for adding garlic because he wasn’t making carbonara, he was making carbonada.

I read somewhere that Italian Americans use much more garlic in their dishes due to economic reasons. Garlic has always been a food of the poor. It was cheap to produce, and yet still flavorful. Generally Italian Americans are decendants of impovershed Italians. (Why would the rich leave?) These impoverished families were originally much more apt to including garlic in their family recipes to mask the inability to afford the higher quality ingrediants. And later generations kept using it, because that was what "Nona" cooked for them, and no Italian, regardless of what country they live in, argues with Nona's cooking. Also, In the US, there is a difference between Parmigiano-Reggiano and Parmesan Cheeses. Parmigiano-Reggiano MUST be from Parma, Modena and Reggio Emilia regions of Italy. Parmesan is usually American Cheese made with the same process.

At first I thought I've heard Spaghetti Cabronata 🤪 But I am surprised that he didn't use extra yolk, because as a baker he would find a use for that separated egg white very easily.

I know this is old but I hope to GOD he doesn't learn how to make a cake from Cake boss! They may be pretty, but that's it! I have been there, line so far that it's HOURS of wait, though we waited an hour and half because someone in the group really wanted that damn cupcake! And I thought to myself, this better be the most delicious cupcake I had ever eaten for this long ass wait! And turns out.... IT WASN'T! I mean, it was nothing more than a cupcake similar to something store bought. In fact, based on pricing alone, I would have been happier with the store bought cupcake than one from that bakery.

I was watching a Food Network show with Giada De Laurentiis, who of course comes from a famous Roman family, and she was making Amatriciana with one of her relatives, and she asked her to cut the garlic and her cousin or whatever said 'what for, you don't put that in Amatriciana.'

In fact…. a guy here, also of Italian origin, who prepares spaghetti carbonara (a very famous name and dish all over the world!) and doesn't even know how to pronounce it. When I hear these things, I just shake my head.

Buddy does make a big deal of his being Italian. I'm an English Jew, and I know how to pronounce "carbonara". (Yes, I don't keep kosher, so I have no compunction about eating either guanciale or pancetta.)

@@vincenzosplate I think Italian immigrants in the USA started using more garlic because they were very poor at first, and garlic is cheap, and flavorful, and possibly masked the flavor of lower quality ingredients. And it just stuck around.

Yes we all should be terrified of Vampires they are real and in every major city. You see they have fooled the world about their existence with all the stories and fiction by writers and Hollywood, but they have been hiding in plain sight, they camouflage with Humans by presenting as the creatures we know as Lawyers, and have created a whole system to protect themselves as the prey on the vulnerable and downtrodden. A healthy and regular dose of Garlic, usually in food, helps keep them at bay and is especially necessary for people who live in major metropolitan areas or who regularly expose themselves via entertainment such as TV or the internet.🤣

I don't know if many pastry chefs in the USA start off exclusively in pastry. I only know one and she had serious cook experience on the line at a Michelin rated restaurant.

I think it would also be better if he freshly ground the black pepper and maybe added more at the end. He could have ground the pepper off-camera or something, but pre-ground pepper barely has any flavor left.

He absolutely killed me with spaghetti cabronatta (because of the word "cabrón", which is a common slang word (sometimes an insult) in Spanish). My observations: 1. The pancetta, though I know how hard it is to find guanciale in some places, and the guanciale purists can go to hell for all I care. 2. The parmiggiano, but he should admit pecorino is the correct cheese. I am ok with 50-50 pecorino and parmiggiano. And "parmegian" doesn't even exist in the English language. It's "parmesan" (even the French say it) or called it by its birth name "parmiggiano". 3. Cheap pasta. I guess he needed a quick grab in order to make the video on schedule, but still, he could have used a better brand than Barilla. 4. Garlic is a big no. He just made his own ancestors cry right there.

He’s adding garlic because he’s using pancetta instead of guanciale which has garlic on it. I would have also added sage and rosemary which is on the guanciale 😃

See Vincenzo, he isn't making Carbonara, he is making CarbonaTa, the classic dish from Off-brand Italy, AKA New-York. The "T" in Carbonata OBVIOUSLY stands for Garlic.

Sono stato da Cake Boss, non e` proprio a New York ma molto vicino. Si trova a Hoboken New Jersey, dove e` nato il grande Frank Sinatra. Il posto e` carino, ma abbastanza stretto all'interno. Ho provato dei cannoli, direi molto buoni e un muffin che era buono, ma ho preferito i cannoli. Comunque vale la pena una visita.

I didn't like my experience there. It was around 11 am and there was already a line around the block. The wait was estimated to be about 1 to 2 hours. Because of one single person, we waited in that line for 1 1/2 hours. Thankfully this was around fall so it wasn't super hot out that day, but still! So, I had this AMAZING idea of what the cupcake would taste like. I thought it would be NO LESS than heaven in my mouth. Sad to say that when I finally gotten my cupcake, it did NOT taste like heaven in my mouth. It was fine for a cupcake but not the quality I would expect from such a high-profile bakery. It was no better than cupcakes I find in the supermarket. Not impressed and would NEVER go back! Granted, it could have been a one-off thing, but I doubt it.

The US has the highest food poisoning rates in the world, so his extra step of turning on the heat is warranted. Reporting of food poisoning in processed food is voluntary instead of mandatory. Some think I go too far in washing most everything but it's better to be safe than sorry.

Ayo Vincenzo, I wanted to ask you: how bad is it to make Carbonara with smoked Austrian bacon instead of Guanciale? The rest of the Carbonara recipe of course is the same. No garlic, pecorino romano and no cream.

my friend, the flavor of the smoked meat may be too strong and overpower everything, so I wouldn't recommend it

Smoked bacon is too overpowering. I am Czech, so most bacon is smoked here as well, I tried using it for carbonara once, an it didn't work. It was still tasty of course, but the taste was completely different from regular carbonara.

But here (9:16) he is even more wrong! Something like….the pasta “Carbrnata”. 😀 PS: I really don't understand what's so difficult to pronounce Carbonara. In Italian we have many words that are difficult for a foreigner to pronounce, but Carbonara is one of the simplest words ! Among other things, he is also Italian American !

Ma quel tipo sarà di origine italiana, ma evidentemente avrà solo l’apparenza di un italiano. Non mi sa dire neanche “spaghetti carbonara” come si deve ! E poi ci vogliamo meravigliare degli americani (quelli diciamo originali) quando pronunciano i nomi dei nostri famosi piatti ?

Caro Vincenzo, forse un piccolo consiglio, così da amico (detto tra noi). Quando commenti dei video, la merenda sarebbe meglio lasciarla da parte. Perché mangiare e contemporaneamente cercare di commentare qualcosa, aspettando che il boccone scenda giù, diciamo che non è che sia proprio il massimo. Era solo così un piccolo consiglio. Forse se ti metti tu stesso dalla parte dello spettatore, probabilmente sarai d’accordo con me. :)

I think the reason Garlic is used so much is because its mentioned in the Bible Numbers 11:5: "We remember the fish, which we did eat in Egypt freely; the cucumbers, and the melons, and the leeks, and the onions, and the garlic":

Can’t even pronounce it correctly. No garlic! Garlic doesn’t belong in everything. Where’s the guanciale? Where’s the pecorino? Cake boss makes great cakes. STICK TO CAKES.

Vincenzo you gotta understand that the products they have over there are are tasteless so garlic is the only thing that give any taste at all. It's sad but it's also true. The Italian dishes are so simple because the ingredients you have in Italy are amazing.
