So many stories about what a wonderful cook and person she was, but of course, no recipes were written down. I learned something today! To soften the onion before you put it in the spam! I'll try that next time I make frikadeller (fried meatballs). The real problem is how much the breadcrums (or flour) soak up - I usually regulate that with adding an egg extra.
