鸡蛋灌饼是用鸡蛋和面粉制作的一道小吃，自我学会后，几乎每周都给孩子们做，刚出炉的鸡蛋灌饼抹上甜面酱再裹上青菜和火腿片等肉类，一顿有菜有面有肉有蛋的营养早餐就完成了，也经常被我装到孩子们的便当盒里去。
我试过不少做鸡蛋灌饼的方法，光面团就试过好几种，凉水和面、热水和面和温水和面的口感都不太理想，凉水温水的太有嚼劲不太适合孩子吃，热水和面就没有嚼劲口感不好，最后我用一半热水和一半凉水制作，这才选对了配方，我还加入了半杯全麦粉代替白面粉更健康。刚出锅的鸡蛋灌饼饼皮酥脆鸡蛋鲜香特别好吃， 关键是用这个方法无技巧无难度，强烈推荐给大家，谢谢观看和订阅！
所用材料 Ingredients
中筋面粉 all-purpose flour 1 cup (165g)
全麦面粉 whole wheat flour 1/2 cup(75g)
盐 salt 1/2 teaspoon
热水hot water 1/3 cup(70g)
凉水cold water 1/3cup(70g)
橄榄油 olive oil 2 tbsp
鸡蛋 egg 3
小葱green onion
这个配方制作的面团大概在400克左右，分成6个小面团可做三张20-25CM左右大小的饼胚，每个饼胚里可灌入一个鸡蛋，中火烙制，熟练了后每个饼大概需要3、4分钟就可完成。

今天中午做了这款鸡蛋灌饼，跟大家分享一下我的体会：1、水的分量还是要根据自己面粉的筋性来设定，我用的是俄罗斯的中性面粉，蛋白质占比达13%，所以我有意少加了些水，但可能加的偏少太多了，所以和面时感觉面团偏干（加上我又忘记加油了），做这种饼如果想要口感好的话，面团不能太干；2、油酥一定要用刷子来刷，轻轻刷一层即可，我今天没找到刷子，就用小勺子舀了一些油酥倒在面皮上，结果没控制好倒多了，在封合两张面皮时，因为油酥多了，很容易被挤出来，而且在后面的擀面时也不好擀，很容易就把油酥擀出来，因为怕油酥出来，所以我就只能轻轻地擀，导致最后擀出来的饼胚没有视频里的那么大，视频里的饼胚几乎可以填满整个锅底，我擀的饼胚只比一个荷包蛋略大点（大约占锅底的三分之二），因为饼胚不够大，所以就显得比较厚，这样一来不容易煎熟，二来也略微影响了口感（薄饼的口感相对会更好些），三来在煎的时候饼皮不容易鼓起，由于不易鼓起，就连带影响到了后面的鸡蛋液灌注，因为那个缺口不太容易戳开、戳大；3、如果是新手第一次做，建议还是选用小一点的鸡蛋，鸡蛋液多的话，灌注的时候容易溢出来，灌蛋液的时候，注意一定要慢慢灌，切忌快！虽然第一次做有点手忙脚乱，最后成品出来的卖相也不怎么样，但吃起来感觉还不错，很好吃呢！

呵呵，这个才叫鸡蛋灌饼呀，改天一定要试试！对了，家里没有橄榄油，做油酥的时候可以用玉米油代替吗？全麦面粉算是低筋、中筋还是高筋面粉呢？还是它就叫全麦面粉？如果没有全麦面粉，可以都用中筋面粉吗？那中筋面粉的分量就是配方里的中筋面粉加全麦面粉的总分量对吗？另外，我看您擀饼胚的时候，饼胚跟着在转动，这个是需要技巧的，应该跟手掌的用力大小有关系吧？请问是怎么做到的啊？

不好意思刚找到您的留言，我简单回答下你的问题：1、没有橄榄油可以用玉米油代替。2、全麦面粉应该就是全麦面粉吧，应该不分筋度？这个我也得Google学习下。3、没有全麦粉就换成等量的中筋面粉做不影响。4、转动擀皮确实需要点技巧，左右手要不均匀的用力，一手轻点，一手重点，这样才能转圈圈，熟能生巧，多做多练习就会了。

如果您是第一次做没灌进蛋液很正常，我曾手把手教一个朋友第一次也把鸡蛋灌外面了，要想成功的把蛋液灌进去，第一要用一个带尖口的杯子容易操作，第二要把饼的小洞用筷子扒大一点，翻面后洞口会被蛋液粘住，等操作熟练了再扒小洞口灌。按我的方法只要饼能鼓起来就算成功了一大半，多做几次熟能生巧灌蛋液就不成问题了，再遇到问题欢迎随时留言给我：）
