Miss Debbie, thank you for brining me to your kitchen! I'm coming all the way from Canada, and I can't wait to try out what you've taught me. My son and Husband love saltfish, and I tried to make saltfish rundown for them once before. Let me tell you, my attempt did not run, it barely even walked! I know this next time I make it, I can do justice to the dish and the ingredients, thanks to you.

Yes, I understand Debbie. In my home I would say flaking the fish. In St Lucia my mum use salt Mackerel. Not everyone would like it, but I like sliced tomato, cucumber and shredded iceberg lettuce as a side salad, with fried plantain yam or nice breadfruit.

So auntie I used to sauté the seasoning and greens then drop the fish in then the codfish. I saw others on KZbin put all the ingredients in the full milk and wait for it to reduce. I see with you they you reduce milk first and foremost then fish first? The seasonings and greens. It looks so right. It so much the custard I saw when I was a kid. I’m wondering if the Can coconut milk (all I have access to) has less oil and way tooo much water
