Love this recipe. It went really well. I didnt have any dry coconut but i used the grace coconut powder and did it the same way like you did and the custard started to form. It tasted awesome from now on thats how i will be cooking my tin mackerel.

Wicked dish Miss Debs. Never had mackerel from the tin for rungdun always use salt mackerel. Gonna definitely try this. I'm in the UK fresh coconut hard to come by. Yes Ms. Debbie I bought a fancy can opener from macys. It promise not to leave a jagged edge. Mah! In less than a year I fling it in the garbage and asked my son to order the regular hand crank, sharp edge can opener and I couldn't be happier 😍
