Can you do a big batch packet for how to cook big batch from survival food as if grid down? I'm in ministry and will have a huge amount of people to cook food for from food I've dehydrated and canned. If you could help me with that id surely buy the pack. My big concern is making enough bread stuff over a outdoor cook fire, which would be the only option I'd have to be able to feed people . Peace and blessings upon you and all your house ❤🙏

I know I’m not the target demographic for your videos, but l wanted to say thank you for making your large family videos. I’ve just finished university. I don’t even have kids, but I love watching your homemaking content. I feel more confident in the kitchen because of your videos. I’m also now invested in your shift towards no more large food stores. You work so incredibly hard. And you do it with such grace! You remind me of my mom. An incredible woman who can move mountains! SOURDOUGH STRETCHING TIP : I only double the recipe, but for my hands, it’s a lot of dough. So I dump the dough onto the counter and push it out flat like I’m making a pizza and then roll it up and put it back in the bowl until the next stretch time. For me, it seems easier than holding up the mass of dough and trying to stretch it.

My family is smaller, but so much you share I apply to my life. And these larger recipes are perfect for larger gatherings of friends and family or even to make and share with neighbors! Thank you for making these. I like the longer ones, so relaxing. It's like chatting with a friend as you do work. 😊😊😊

There isn’t much better than sourdough, but make bagels sourdough?! I could eat them every day, for every meal 😂 I’ve been making Lisa’s sourdough bagels for over a year and we can’t get enough! Love love love seeing this shift, it’s a lot more work, but it’s a joy 🤩

Couple of things - Whenever you have to mix flour, starter and water, it's easier to either mix the flour and water and then add the starter or the water and starter and then add the flour. Also - dough is easier to stretch and fold when the dough has a higher hydration - try adding more water to your dough, it'll be looser and easier to stretch.

I'm so excited you got another video up yeaaa . I am a sixty-year-old disabled woman, I raise the huge family as well sometimes up to 14 kids. I wish I would have known your little tricks then lol. But I guess I figured a few out on my own too as well, and we made it through all grown up now with families of their own. But I'm going to go watch a video now I'm so excited I just love watching you you're like the little sister I never had.

I’m a mom of a 13 month old with another on the way, and I’m super busy with college, caring for our house, and helping my husband who is mentally ill, as well as working on a small business. I often feel very overwhelmed by all of my responsibilities. Watching your videos helps me to feel like I can handle it, and break down these big tasks into more manageable pieces. Lisa's recipe for Sourdough Sandwich Bread might be more efficient for you. You can do 2 loaves at a time in the Kitchen Aid, let it sit to rise, then shape and let rise again. NO Stretch and Folds. I let it rise overnight. It's super simple. I've been on a similar journey with Sourdough as you. Making all the bread products that our family needs. It's fun to see others on this journey, too! 👍🌟🌟🌟🌟🌟

Lisa’s English muffins are super easy and great for an egg sandwich. My family loves them. I found her in 2019 and I’ve been using sourdough recipes ever since!

Hey lovely lady, I know when people make puff pastry they poke a hole in the top with their fingers to indicate how many times they have rolled it out and done the folds, maybe you could try this after you stretch and fold, just jab your finger in the top? That way when you lift the cloth you'd see two little holes and say "ok, I've done this twice" hope this helps, x

There are a few popular methods for substituting buttermilk. Pick which one is best for you, based on what you have on hand: 1 cup buttermilk = 1 Tablespoon white vinegar + enough milk to measure 1 cup 1 cup buttermilk = 1 Tablespoon lemon juice + enough milk to measure 1 cup 1 cup buttermilk = 1 cup plain yogurt 1 cup buttermilk = 1 and ¾ teaspoon cream of tarter + 1 cup of milk How to substitute Buttermilk The simplest way to substitute buttermilk is to pour 1 Tbs. of vinegar into a 1 cup measurer and then fill the rest of the measuring cup with milk. Then gently stir the mixture and let it sit for about 5 minutes. If you don’t have vinegar, lemon juice and cream of tarter also work as great buttermilk substitutions. Use them in the same way described above.

Hi jamerrill ❤ If you leave about a cup of milk in the bottle and give it a good shake, you should be able to get all the cream off the inside of the bottle. This is how we do it here in the UK. Perhaps you prefer to scrape it out and that's grand but just thought I'd share. Take care and all the best.

Your homemade bagels looked awesome and I know they were yummy! We like to cut the bagel in half and spread a little butter on it and toast it in the cast iron skillet, and then spread a little cream cheese on it! It will take your bagel to a whole new level of flavor! You ought to try it!

I've just started my youtube channel and i am excited about it. but i am working on a video where i do multiple things and record along while doing them. seeing you do the things you do just blows my mind. i have found a new appreciation for your content. I have been on Lisa's sourdough journey for about 5 years now and have "mastered" several recipes. So thankful for all she has taught me through video and blog. Love seeing you on this journey as well. Once you "sour dough" you never go back. Our gut health is so much better these days We make discard pancakes at least once a week here and I would suggest adding a bit more flour to your dough. Your starter is very thin, causing your batter to be very thin. You are not getting a good "rise" on the pancake itself for that reason. Our pancakes come out a lot thicker and very fluffy. Add a bit less water when feeding, or add more flour with your recipes. Keep up the good work mama. Cant wait to see what you try next Have you ever tried her one pan skillet meal? It would be fantastic for your 18" cast irons pans. It is so very yummy.

Old Baker here. I'm just hurting watching all the work that could go much smoother if you would use proper food service buckets and tubs. Cambro is the standard.Easy to measure if you buy type with volume on front. Easy to stir and clean. Great for storage in frig or counter and stretch and folding if you use the "bus" type restaurant ones. I used to make 3-8 loaves at a time when my kids were little. But at work we used barrels you could roll into frig and tubs for smaller runs. Glass is nice but it's not used in bakeries generally. You can get DECADES of use from good food service buckets and tubs.

Might add good source for commercial flours are local food service supply. You can get 25-50lb bags of all sorts of flour and usually fresher than grocery stores. Or Azure. Recommend 10lb bucket for flour for bread canister. Refill from 5 gal bucket. Large whisk to lighten flour in before scooping. Never pack cup of flour. With a scale you can skip whisk and light scooping. Soon you will know by the hand feel if hydration is too low. I use a old scoop of sorts and know one scoop is 1 recipe. When you go to adapt to larger recipe try to use bakers percentage rule to adapt easier. Google it.

I freeze my portioned out Greek yogurt for starter. Thaw when I need a fresh pot of homemade yogurt. Works every time. That way you never have to run to store to purchase.

Instead of using that much of a starter for your baking projects you might want to consider to make Levain, which will allow you to use less amount of a starter and will reduce the amount of discarded started.

But the beauty of the discard is the key to making all those yummy foods so there is no waste .But it’s a good tip for those who want to cut down on their amount of discard unless they want to save a lot of their discard up for making yummy pancakes and such with .Blessings 💕

I never have any sourdough discard. When I’ve used my risen starter, I seal it up & just put straight into the fridge, unfed. When I want to use it again, I just bring it out of the fridge & feed it. Then wait to rise. Use. Return to fridge unfed. Put on repeat. I use fresh starter even for discard recipes. So no waste.

I too have been making Lisa's sourdough bagels, both the regular and the discard and LOVE them! It's a lot of work for 8 bagels so even though it's just 2 of us I will be doubling the recipe. They freeze wonderfully. I have made everything bagels and onion bagels and using an egg wash helps any toppings to stick.

Say, if you ever run out of parchment for putting the loaves into the dutch ovens you can use white rice flour. Grind some rice in your mill, dust the bannetons with rice flour and bare hand slip the dough into the hot ovens. If you are hoping for the big bubbles on the inside your dough is going to have to be wetter.

Hi, I’m not sure if you know this, but you can make buttermilk by adding lemon juice to milk. They call it sour milk. Not sure if you had no milk at all though. But for those who may not know you can make buttermilk by adding 2 teaspoons lemon juice to 1 cup of milk and let it sit for 10 minutes. You’ll love those whisks for stirring other recipes also. They really do work well.

My dad would fix large pancakes and call them manhole covers! Sometimes he would drain a can of whole kernel corn and add to the batter They were delicious especially with my mom's homemade syrup.

I have really enjoyed your transition to more unprocessed food. I have always enjoyed your videos, but as a family of seven who doesn't cosume a lot of processed foods your videos are so much more relatable to us. We are a homeschooling family and also run our own business with almost forty employees in two different cities (adding our third now) and three different locations. My husband is the CEO and I am the CFO. I feel like between my husband telling me and you also talking about how you don't do it all yourself I am trying to work on delegating more. I keep on delegating and have a management team underneath me but have hired an Executive Assistant to help out. Life is good!

Propane doesn't burn as hot as natural gas. I get so aggrivated. With my now 3 year old stove I never thought it out how it will not work with out electric. I miss my family's stoves of the 80s when the electricity went out we could cook and open stove door and heat the kitchen. Those were the good ol days. Loved the video. My grandparents had a natural gas dryer and hot water heater. Never ran out of hot water. I work out of the home 60hrs a week I'm so jealous of your life. Your are so blessed

As I developed the pancake recipe I used originally, I found I prefer a thicker batter. I either lessen the amount of liquid or increase the flour - just makes for an easier pancake to flip and it’s thicker/hardier. Tho there ain’t nothin wrong with thin pancakes. Yummy either way!

Farmhouse on Boone has the BEST discard pancake recipe and no milk needed! I'm GF DF. I've found with sourdough bagels and pancakes they freeze super well but go stale after a few days of being thawed. So excited to see how you do English muffins!

I make my pancakes large like yours! I think we are doing them right .. who wants a little bitty pancake ? Not me ! Lol Thank you for showing us what you do with your sour dough discard . I use the same lodge grill that you are using and I’ve had mine for about 43 years now I find taking care of them is very easy and I have a lot of cast iron pots and skillets etc and they stand the test of time as long as you treat them right . Lodge brand holds up well and I think you can’t find any that are as economical on the pocket book as the lodge brand is .. I love cooking with cast iron . Fantastic video , as always ,Blessings 💕

You may consider not packing your flour into the measuring cup, the difference between packing the flour vs fluffing and lightly scooping can be more than a 1/4th cup. Times mega momma 8 batches is 2 cups too much flour for the water. Weighing the flour for big batches would be faster and you will love the results. Good luck on your adventure!

When I was young my mom used only carnation evaporated milk I never drank any other milk. Plus it is good a long time. Just add equal parts water with the milk we ate it even in our cereal now I find it’s convenient to keep a case around

Next time you do pancakes, get you a silicon kitchen paint brush(like for bbq sauce) and a cup of melted coconut oil to paint on the oil, wont be so much on griddles.

I love the english muffins toasted with butter in the cast iron or leftover heated up in the toaster. I dont know why but they taste so much better as leftovers

Those basket covers can be used for the dough to sit in or as a cover, so you didn't do anything wrong.

Thanks for sourdough inspo! I killed my sourdough a few months ago, by accident. It was about 2.5 year's old and it was so upsetting i haven't had any desire to start a new one untill now. My kids are gonna be soooo happy with discard pancakes now 🎉

Hey Jamerrill when you empty out a milk container with cream on top.. just run the outside of the plastic bottle under warm to hot water and you won't waste a drop of yummy stuff!! And won't need a utensil to get dirty.

Jamerrill you need some crocheted scrubbies. They work wonders with cleaning scrubbing dishes and are washable. Would love to make and send you some, I just need to know where to send them.

You could try adding beaten egg whites to your pancake recipe. It makes them so light and fluffy. I have a child that doesn’t like pancakes but loves when I make them with the egg whites. I also add vanilla to my recipe. My pancakes aren’t sourdough but I’m sure those additions could work with sourdough.
