Great job, Anita! I'd be all over almost any iteration of that sandwich, but you're right - a lot of work for a 'decent' sandwich. In my mind, I was thinking about a handful of potato chips for some crunch and maybe a ciabatta bread to hold together better? Ah, what the heck do I know? 🙂

Day 33 of asking Barry to make the sandwich I submitted!~~ This sandwich is screaming Korean food to me. I’d plus it up with some gochujang and sesame oil in the scallion mixture. Looks incredible! Cheers to both of you!

Thats a garlic mayo because its an emulsion of egg and a neutral oil. Aioli is an emulsion of just garlic and olive oil. Doesn't detract from the recipe at all.

Another recent history sandwich is the Squishy Egg Sandwich from the UK. I saw it on the Rosemary and Thyme TV show from Season 3 Episode 1 "The Cup of Silence" . It is Poached Egg on an English Muffin. It is eaten open faced, with a knife and fork. 2 eggs and one lightly toasted English Muffin. Served with Streaky Bacon. Google it to find my recipe. I microwave my poached eggs now.
