First. When it comes to Japanese cheesecake,I'd always recall the scene from a video that the cake is so bouncy and soft,but not falling apart,and the cake in this video is just the way that it's supposed to be. So satisfying~

I made it a while ago and it tasted great. Middle was probably not as great as it could have been but once it set overnight it was ok. This was my very first Japanese cheese cake attempt and I was really happy. Will make it again. Thanks Gemma - all your recipes I tried so far were great!

Dear Gemma, I was not much into cooking let aside baking even a year ago. I bumped into your channel some time last year and just loved your videos. To be honest, your way of presentation and talking things through made me believe that I can bake too! Two weeks back I was looking for a recipe of a Black Forest cake in your channel but found none. However, I found it elsewhere and gave it a go. I wasn't expecting my first bake to come out so good in taste! But, it did! It did really motivate me, since I had heard tons of stories of people's first baking experience going south. Last week, Japanese Cheesecake was what I wanted to try. Luckily, this time I found it in your channel and went for it! The Japanese jiggly cheesecake came out absolutely lovely!!! So light unlike New York cheesecakes, as you mentioned. I only knew it once I tasted it! Thank you so so much. Couldn't love you more! 💕

You can use lemon juice instead of cream of tartar. It's the acid you need to stabilize the whipped egg whites.

Vinegar and lemon juice are usually substitutes for cream of tartar but I haven't tried it in this recipe.

Looks delicious! And I accidentally bought cream cheese when we had plenty! I love that I always learn something when I watch your videos. Like introducing the egg whites a little bit first and then the rest. I also realized that your salt tip is so true, and I discovered that's why I like your best ever banana bread recipe so much is the extra flavor from the salt.

The doily tip is so useful!! 😍 Does the cream of tartar stabilize the proteins in the egg whites? I've seen people on cooking shows add a few drops of lemon juice into egg whites for their meringues. Since cream of tartar is also an acid, I suppose it gives the same effect?

Hi! Yes, vinegar or lemon juice can usually be used as a sub for cream of tartar but I just didn't try it for this recipe.

Essentially what's going on with egg whites is that they are a mix of water and protein, which is what makes them so good at making bubbles when mixed. The way to get the air beaten in to stay in is by causing those proteins to "unravel" their molecular structure. This can be done by beating the heck out of them, but you'll get a better result by adding a form of acid which introduces more hydrogen ions to the party. Those loose hydrogens help those egg proteins denature with less beating, resulting in a more stable foam.

Wow! This is absolutely fantastic and lovely cheesecake. I have had a lot of problems in the past while making cheesecakes but this recipe looks very promising and I'm soon going to try this out. I loved the cake a lot. It's gorgeous, lovely and fluffy and most importantly very light and of great texture. Thank you so much Gemma Ma'am for this wonderful recipe. But there is one problem that whenever I bake a cheesecake, either they don't set or they get sort of burnt on the top and remain uncooked in the middle and bottom portions. And sometimes the cheesecake sort of splits like the cream gets seperated. Can you please suggest some ways of avoiding these things? Thank you. God bless you and your family.😊😘

Gemma~I was wondering a couple of things. 1. How many times have you made a recipe before you video the process? 2. You've mentioned a couple of times in other recipes "depending on the temperature and humidity"~I understand the terminology but what I'm wondering is, if making pastry or bread~what are ideal temps and level of humidity? 3. How do you and hubby maintain your healthy weights? Do you give away a lot of your accomplishments/failures to neighbours (I'm sure your neighbours will never move as long as you're baking if you do, lol.) or to family? Lucky, lucky them! Hi Jenn! All great questions! 1. Usually the first time. I've had more than 12 years of experience so practice makes perfect. :) 2. Moisture in the air will affect conditions. It's hard to say what is ideal ,just so you know what your conditions are and adjust accordingly. 3. Lots of hard work! And yes, our neighbors and team definitely get their share of treats. :)

That looks great but its not fluffy and jiggly enough for me 😣. It doesn't have that dome top and a texture like a soufflè that I normally get. Your cheesecake has sunken in the middle, and the inside looks crumbly without those uniform mini bubbles all throughout the cake. Advice: The folding part is very important to getting those uniform bubbles, and you got that using a thin metal spoon right but the way you fold should be really gentle and careful. Also, they taste better when fresh out the oven. You shouldn't need this cooling process since it deflates the cheesecake more than you think. You could try lowering the pre-heat temp to around 310-350°F (I use 320°F), and to around 250-290 (I use 270°F/280°F) while its baking. The cheesecake will not crack if you baked it nice and slow with the water bath. 😊 Ps: is this your first time? Mine was a mess when I first made it 😂 Pps: I hope you'll see this 🙏

707Bangtan, you seem to be knowing a lot about the Japanese cheesecake. I have tried different recipes and techniques, I have watched many videos and followed them but I seem be having the same result, they look OK in oven for the first 20 minutes then they start sinking without me opening the oven or doing anything sometimes they sink before I even lower the temperature... I also use a oven thermometer but no good result, they sink completely and taste eggy. What am I doing wrong? Any advice pls?

@@VeNuS2910 try it, japanese cheesecake is a very nice desert. Regarding the flour, if it has flour it does not mean that it won't sink. This cake has very simple ingredients but sometimes is hard to get it right for various reason. Anyway good luck, write back if you succeed!

Gemma Stafford hello ! If you don't know , let me tell you, India is full of a variety of sweet dessert and sweet pastries recipes . If you're knowing about them for the first time then you may find them weird or different but when you actually taste them , you'll be memorised . Here's a list what you can go for 1. Gulab jamun : This one is insanely delicious .... You can mix n match with some other thing and make variations in it or you can make ...gulab jamun cake or ... Stuffed gulab jamuns or ... Whatever you imagine ! 2 . Kalakand , and this one is what you MUST know about ... 3 .Dabul ka meeta : this is also called shahi ka tukra in some states . It's recipe is simple but the taste is beyond your imagination . 4 . Ras malai : You may do the recipe itself or you can make ras malai cake 5 . Fruit biscuits : Just refer them as Karachi fruit biscuits ...
