I believe the citrus they are using to make the jelly is called amanatsu. Its not a grapefruit, or a lemon. Its a hybrid citrus made crossing multiple strains of citrus like sour orange and pomelo. It is supposed to be similar in size to grapefruits which is why they look bigger than regular lemons.

Nice to see Im not the only one that washes my fruit in mild detergent before eating it. But I only do it for fruits with rinds that I dont eat. Like oranges, limes, lemons, melons, bananas etc. For apples, pears, peaches, plums etc, I use a mixture of baking soda and vinegar.

the waste are all organic, they won't harm the nature. the fruit price is high enough to pay for all the supply chain, and customers get yummy product and they think it's ok to pay that price. So, everybody is happy, including nature, don't worry.

FYI - According to the Cricket Fruit Parlor's website, a set of 3 fruit jelly is US$21.00, which is actually not that expensive by Japanese standards, or about what one would expect to pay at a luxury establishment like this one in Kyoto or Tokyo for a dessert of this type.

About the fruit waste; she cut the kiwi fine, and Idk about the melon because I can't tell what kind it is, and the papaya...yeah, she went a little ham. But the middle of the pineapple is woody, and the nearer to the outside eyes you get the harder the texture becomes.

it's more of a cake, those were slices of shortbread, which is a much sweeter type of whitebread commonly used in desserts... so yes, this is definitely a dessert.

Milk bread, a very rich cream bread. It's the Japanese version of white bread. You should be able to find it in most asian bakeries.

Probably gelatin, it’s the blooming process, where they put the leaves in water to hydrate and to ensure smooth texture at the end of it. don’t know the measure per leaves though..

I watched a documentary PBS on the island that a certain type of orange is only grown on and you can only get those jellies there. They showed the whole farming process, basically start start to finish and they don't waste a thing. I wish I remember what island it was on 😣

My understanding is that the type of bread is called shokupan ("milk bread"), and it's not too different from white bread in the US. The texture is apparently a little lighter/fluffier, and taste-wise it's fairly subtle. If you go to follow a sando recipe/tutorial in the US, a lot of times they tell you that if you can't find/make shokupan, white Wonder Bread or regular Texas Toast are acceptable substitutes.
