I am chinese and I LOOOOVE Japanese Unagi! It is probably one of my favourite dishes. Every time i visit Japan i make sure to eat it. These chefs are very dedicated and skilled. I wish the cooking methods are preserved for many years to come~~

That dining room is stunning. The sound of the waterfall is a perfect backdrop. Will definitely come here if I ever have the pleasure of visiting Kyoto.
The first sense that comes into play in the enjoyment of a good dinner is the sense of smell. Certainly the master's grill wafts into the air wonderful and enticing smells from the eel fat dripping onto the charcoal. The gentleman is a perfect roaster. In Greece we say "you become a pastry chef, you are born a roaster".
Loved eating these growing up with you Japanese Industry process.

The process is very interesting. It's oh so Japanese to perfect a particular craft and hand it down. I have a comb made by such a craftsman in Kyoto, and yes, it's an amazing comb. It will last forever.

some people might find this video disturbing, but it is actually an example of true mercy; freezin the eel numbs it and puts it in sleep mode, and the first thing that the cook does is severing the spine so it cannot feel the rest of the process.

It is truly brutal and disturbing. When George Bush visited Japan for the state dinner for Sushi, somehow the scene reminded him of some of American POW being deskinned for sushi, eaten by Japanese soldiers, US president Bush threw up the whole thing and the spill-out stained the Japanese PM's tie and suit jacket. So, the preparation part of killing eels, better keep it off public view.
