INGREDIENTS for this video⬇️ ⬇️ ⬇️
Step 1:
• 2 cups dry fruits (raisins, prunes, currants, cherries)
• 2 1/2 cups rich fruit juice(dark cherry, prune or grape)
• 1/8 tsp ground allspice
• 1 cinnamon stick
Step 2:
• 1/2 lb All purpose flour
• 3 tsps baking powder
• 1 tsp salt
• 1 tsp mixed spice
• 1/4 tsp coriander powder
• 1/4 tsp ground allspice
• 1/2 tsp fresh nutmeg
Step 3:
• 1/2 lb butter (about 2 sticks)
• 1/2 lb soft dark brown sugar (about 2 1/4 packed cups)
• 1/2 tsp orange zest
• 1/2 tsp lemon zest
• 5 large eggs
• 1 1/2 tbsp lemon juice
• 3 tsps vanilla
• A few drops Almond essence
• 1 & 3/4 - 2 cups of the fruit puree

You're welcome! It's like a much lighter version. Some folks find fruit cake heavy on the stomach but this is pretty easy to handle 😄

Is it the number of eggs that makes the texture more cake like?

Hi would like to give this recipe a try but just verifying is it half pound of brown sugar or 2 1/4 cups because 2 1/4 cups is approximately one pound. One cup would be about half pound. I want the exact beautiful texture you got so really don't want to mess up the recipe. Thanks in advance

The brown sugar was packed not loose. You have two options: 1. Use a scale and weigh out 1/2 lb soft brown sugar or... 2. Measure 2 1/4 packed cups of brown sugar
