Omg. That spicy mango sauce is amazing! I made the mango tofu tonight for dinner, definitely the best tofu I have ever made. So delicious! Would the sauce be able to be frozen? I would love to make a huge batch to stock my freezer with to pull out as needed. 😊

Yes absolutely, the marinade can be made up and then frozen, when it then comes to using it I would remove it from the freezer and let it thoroughly defrost in the fridge (maybe do this the day before), then coat the tofu with it as normal when fully defrosted! With any risotto, once all the stock is absorbed and its on final heat through/season, I like adding a load of fresh spinach and just stir till it wilts, adds a really lovely bit of great greens.

I actually usually keep the seeds in and in other recipes where I've used jackfruit I've mentioned I keep them in because they're completely digestible and contain high fibre, but in this recipe I removed them just so the 'fish' cakes weren't lumpy and held their form better though you can definitely keep them in if you like! ☺️

When I saw your insta post I was desperately hoping the fishcakes wouldn't contain tofu - hurrah!! I love jackfruit and I'm going to try that recipe asap! I still make your cajun jackfruit and wild rice dish all the time, and I tired your dahl and spiced potatoes recipe a few months ago - omg! 15:45 I have never been a mango person (probably wasn't lucky with buying good ones ;P) but my mum adores anything mango-flavoured so I definitely should make this dish for her :D Also, do you think the tofu could just be tossed in the sauce in a big bowl as opposed to brushed with it? Would be much easier I guess!

If you can find a sweet and juicy mango, there's honestly nothing better but I've had some bad ones myself, some with barely any flavour to them! Yes definitely (I tend to do things the long and hard way, haha!) - I tossed them in the marinade while recipe testing and the only thing was a lot of the marinade ended up on the baking tray and baked to it, but if you can allow any excess to drip off each piece before placing them on the tray it should work just as well! ☺️

I cooked the Risotto with miso the other night. i used veggie cube instead of mushroom, salt and miso.. and it was soo salty 🤯 even though i referred to the recipe. I was really bummed, cause i was looking forward to it. Couldnt even change it with vegan cream or veg butter😢

Thanks so much for the feedback! Oh no! It shouldn't be salty - it can depend on the stock and miso paste used - did you use white or brown? I always taste my cooking as I go along to make sure it's not over or under-seasoned. I'm sorry it didn't work out for you!

I really love your videos and your voice, it's so soothing.. But I have a question if I may, I heard from a friend of mine that you're not suppose to expose the miso paste to heat or cook it , you need to add it at the last step, cuz that will ruin the benefits of it, is it true?

Yes that's true in terms of boiling it, I mentioned this in the video - you shouldn't boil the miso as it kills off the probiotics so that's why I said I only kept it warm, which is okay, and didn't allow it to boil. Thanks so much for the lovely comment and for watching ☺️

Since coconut milk powder is basically dehydrated coconut milk, you could use the same amount of coconut cream, if not you could just use a little more desiccated coconut otherwise it won't really affect the consistency if you make it without the coconut milk powder, it'll just be less coconutty - hope this helps ☺️

They can definitely be adapted though, you could use chestnut mushrooms (these are at least the most affordable in my supermarket!) for the risotto, just fry them off on high until they're really golden in colour, or you could make the 'fishcakes' with chickpeas only, skiping the jackfruit (the flour will still hold them together) - I hope this helps and inspires you to recreate the recipes in your own way! ☺️

The texture of your risotto looks incorrect. It should be more creamy as the starches release from the arborio rice. Yours looks undercooked.

Ah it's deliciously creamy! I said in the video it becomes creamy when the starches are released from the rice and that it takes 15-20 minutes to cook, I also use more liquid than the recommended ratio of risotto:liquid, so it's not possible for it to be undercooked. Thanks for watching
