Hi Sara, just flew back after spending 3 weeks back home. Malaysia changed, some for much better and some for much worst. Hi Sara, I live in California USA, but I lived/worked in Penang for a few years and traveled to many other cities in Malaysia. I love Malaysia, beautiful country, its cultural diversity, friendly people, great food, etc. I miss Malaysia every day. I am Cantonese American so I understand when you and yr mom speak Cantonese :) I've made crispy roast pork before. My recipe is a little simpler than Nigel's. When cooked in an air fryer, it is even easier. Chef Roland from Singapore also has good recipes for siu yuk on his channel, Spice N' Pans.

Hi Minnie! Thank you. Yes, Malaysia is truly a beautiful country. Oh, I see. So good to understand more than one language isn't it? I'll try to do it in the Airfryer next, without the garlic. Probably just 500 g of meat. What marinade do you use? Thanks for sharing. Will check out Chef Roland's recipe before making it again :)

@@sara_khong My recipe is Cantonese style with soy, salt, pepper, a little garlic powder, vinegar and 5 spice. Refrigerate overnight. Very easy and super simple in an air fryer for 30+ minutes. Skin comes out puffy and crispy, not burnt and meat is juicy. yes, being multilingual or just bilingual is handy. I also speak Mandarin and Toisan dialects :)

Wow! Never heard of this place. Reading about it and found this: "Minas' traditional cuisine is unique but was mainly influenced by the Portuguese. *Minas prides itself on its food, and comida mineira restaurants can be found throughout the country."* Sounds like Malaysia to me haha

Nice video, Sara. Will give this a try next month. I'm all roast pork out atm. If you have left overs of the roast pork, rinse off the seasoning, add a bit of shrimp paste, a bit of sugar, a bit of minced ginger, 2 minced Thai chili and steam it... so yummy! Btw.. I'm from San Francisco. :)

Hello! Thank you for taking the time to answer my question. I'm so happy to hear that so many people watching from different states. And wow, that's a great idea. There are two main shrimp paste in Malaysia: belacan & petis udang. But I think you mean the Hong Kong style that brands like Lee Kum Kee sells? I do have a steam pork recipe with shrimp paste, sugar, and chili. But not ginger. One of my fav dish. Shall try your version the next time I make it!

Hi Sara, nice video and thanks for sharing. Usually the skin side needed poking to release air and melted fats to fry for crunchyness. Is it still necessary?

Hi Kevin. I interviewed a few sifu, many of them said it's not necessary. I think that's because the vinegar/lime solution is strong enough

i have no luck with this method if i dont punch holes on the skin. often times the skin will separate from the meat and create a hard dome because the air coming up from the meat had no where to go but to push the skin up entirely. i poke holes for the air to release while broiling. i also realise that constantly applying vinegar in the process of the first broil helps to evaporate the moisture faster. salt crust is too much if work for my small kitchen, but i do apply salt, alternate with vinegar, twice, then blowing it dry with the hair dryer. well, i only do 1kg max. my first broil is 100degC for an hour. oh, i also dont leave my meat in fridge to dry. that vinegar and salt does the trick

@@sara_khong ya hair dryer at cold mode. no, i dont marinate overnight. most of the time my siu yuk craving is impromptu so i just soak my meat in ziplock bag till it goes to room temp, then i start working on the meat. dry rub the seasoning. i poke holes at the bottom of my aluminum foil for the juice to drip off so that there is no juice cooking its own meat during the long time in the oven. meat is juicier that way. i remove the foil at the last 10 minute of the crackling process to dry out the meat outer rim by abit. if im lazy i will just leave the foil on the whole process. result will be meat having slurpy juice inner outer instead of juice inside dryer outside

@@user-mr9tw6dj6h I've never heard of thsi method re: poke holes to allow juice to drip off. Maybe I should try. Yes, one of the problem I face is to make sure the inside is moist, yet the skin is dry enough to crackle

@@sara_khong the poke hole at the bottom helps. the concept is like boiling the meat for an hour plus in its own juice. of course the meat will have coarse texture. imagine cooking the meat in a pot of water for an hour. it will be worse if the dripping fats mix with the juice. it is like boiling anf frying the meat at the same time, for an hour plus.
