I used to make hundreds back when I was a baker, we did it similar but because of the amount we used to make, the pastry was only cut to the width of the sausage rolls and the length was left as long as possible. Also we used to put the meat in a piping bag so no need to mess around with flour or rolling the meat out. Just pipe it straight onto the pastry far quicker and no need for gloves. Once the sausage rolls were made we would cut them to the normal size of a sausage roll

It’s amazing what tiny details can do to improve your results. Last time I tried these, before seeing this video, they were edible but disappointing. With John’s knowledge and tips I was able to make them amazing! Many thanks. I feel it’s also worth making your own sausage meat by mincing pork shoulder and belly and buying some nice seasoning online. It really made them feel like premium sausage rolls…

Living in Sweden, where they are unknown, I have to make my own that are very similar to yours. I can buy sheets of all-butter puff pastry but I have to make my own sausage meat. I buy some fatty pork mince (20% fat) or I mince my own pork belly. To that I add salt and a mixture of herbs and spices. I mix up a batch of 46g salt, 9g ground white pepper, and 6g each of ground nutmeg, ground mace, ground coriander seeds and dried parsley (I put that into a container). I weigh out the mince and then add breadcrumbs, cold water and some of the seasoning. For 1,000g of mince I add 135g breadcrumbs, 300g cold water, and 36g of the seasoning mix. Mixed together well into a paste I place it in the fridge overnight to mature and then use that sausage meat in my rolls. The locals love them and have worked out how to come around (for a sample) whenever I bake my 'English sausage rolls'.👍🏻

Hi John, another amazing recipe, my mum always made these amazing sausage rolls and they were gone as soon as they come out of the oven, we didn’t care if out tongues got burnt in the process lolol!! I have made them from time to time but here in Canada it is very hard to get the sausage meat like you get back home so boo hoo😢 I have used a breakfast sausage and removed the skins and doctored them up a bit and they are ok but nowhere near what we were used to. My mouth was watering as I watched you making these little beauties and I could polish one off right now lol!! You really should try them. All over Europe, they have variations of this recipe. In Australia too, although I find the Aussie ones a bit bland. John's recipe should be nice, personally I like to add a bit of finely chopped onion too. His puff pastry is terrific but I'm lazy and just use store-bought most of the time. Give them a go! Oh, and where I am tomato sauce is a must when eating these.

Those look fantastic. There is something similar that is very popular in Texas in the US. They are called kolaches, but that is a generic term used for both sweet and savory breakfast pastries. Technically the savory ones with sausage and cheese fillings should be called klobasnek. Both were brought to Texas by Czechs in the 1800's. A slightly sweet yeast dough is used for both the kolache and klobasnek. My favorites are filled with jalapeno chili and cheese sausage. I think I should try your puff pastry sausage rolls and see how they compare.

These look really good John. I used to make a lot of sausage rolls when my kids were smaller, they loved them and they used to take them to school for lunch but mine were always fiddly and not super easy like yours . Don’t know what I us3d to do but anyway, I’m going to make some like yours they looked super easy and really tasty. TFS.

Our family's recipe is very simple and I believe the best. We use ground beef, plenty of finely chopped onions, salt and pepper only for the filling. Fabulous!

I have a pretty good sausage roll recipe I have been using for decades but I will definitely give this a try. We like spicy foods so I use Hot Italian sausage meat and cook in some onions and a dash of Lea and Perrin's. Thanks for this recipe.

These look amazing and so very tasty! I can’t wait to make them. I’d definitely use frozen puff pastry the first time. But I’ll find your pastry recipe and geez I guess I get to make these delicious sausage rolls again. I’ll admit I adore puff pastry. I also adore croissants but have never tried making them. A similar dish here in Texas is the sausage Kolache. The dough is more bready, however. I do want to try this, and maybe later add a Texas twist by adding jalapeño peppers. Thanks for sharing your cuisine!

With frozen puff pastry sheets and a chub of premixed sage sausage, it's even faster to make; the sheets are just over 1/8" thick and roll out quickly without distortion, so the assembly only takes a couple of minutes, and then it's just waiting for the rolls to cook. Simple, tasty, and filling.

Following your suggestion in the video, I plan to get a pound of ground lamb and mix in curry powder, onion powder, and some garam masala along with the basic salt and pepper; curry lamb rolls sounds incredible.

They look lovely. Worked as a baker when I left school many moons ago. We used to add a bit of mixed herbs to the meat. They were absolutey beautiful. I tried to recreate them a few years ago at home with meat from the super market which turned out to be rubbish and put too much mixed herbs in, they weren't very nice. I'll get it right again one day.
