What the chef in the video is doing is taking what is a thick hamburger and pressing down on it and releasing all the juices into the grill instead of in the meat.

They don't even really have the space or the equipment to even cook properly. The "Grill" they are using is what we used in my workplace to solely toast burger buns and tortillas, it was cleaned daily. We used egg pans for the eggs. Cooking burgers is mess and doing it on a griddle like that would make it so nasty, especially cooking EVERYTHING on it. I guess they also have a microwave.... That shit's nasy. Edit : Oh shit I made this comment before I saw 8:50. They don't have adequate airflow or anything, only thing that kitchen is useful for is making sandwiches. That gunk almost made me vomit.

That's not really improper cooking as much as it is improper cleaning. Cooking surfaces need to be at the very least scraped inbetween items so that the residue from item 1, say a burger, doesn't get into item 2, say an egg. Over time, if you don't scrape, those burned particles gather and get on everything.

I worked overnight as a stocker at Target, and the employees would walk all over the management, to the point that they barely did any work at all. I swear we must've had at the very least about 12 to 15 FULL pallets of backstock in our back room that never got worked. Our inventory was always messed up, because we never knew what we really had. I asked around, why the store manager never did anything about it, and it turns out he was a doormat too. I had to get out of there quick.

He had that hilarious line about how even though the kitchen was fucked, he still was going to get the food out because it was "my house" hahaha. and Dani became a pretty solid owner and embraced the craft cocktail ideas. One thing is that some news outlet interviewed the owner and she said that she didn't even feel like she needed to be on Bar Rescue, but the producers kept begging for her to get her bar filmed so she finally relented. seemed like it was a good place but it got spruced up

I remember I took over someone job because they refuse to clean when it was time to close he would leave after punching out. The manager was a push over. When the DM came and saw what he did he pulled him back and said “where you going?” “Home,” “Aren’t you gonna clean?” “Uh no,” “Why not?” “I’m a cook not a damn cleaner,” “And you not a worker anymore, buh bye,” fired him on the spot. Nobody should be forced to work after punching out. That's illegal and immoral. Sounds like a toxic work environment with bad management. If a manager is punching out an employee, then the clock has stopped and so should the work.

Part of his job is to make sure the kitchen is clean and if he's outright refusing to do his job, then he should've gotten fired. I think its immoral to make employees work after they've already punched out but he never finished his job. Its just as bad as some of these bartenders just walking out of the bar whenever a customer pisses them off
