Ployroong Smith I use brands here that are local in the US. I doubt the same brand is available in your local area but you can check. It is Swiss brand. Also just ask your local grocer or baker where they get their whipping cream. Sometimes it is also know as heavy cream.

How much do you beat the whipping cream when you start to pipe? If I beat it to stiff peaks, when I pipe, the fat and water are separated towards the end of piping.

That is strange, I haven't had that happen before. I usually stir my cream for 6-8 minutes.

Beautiful cake. Thank you for creating a special cake in honor of a special day for our country! I always wonder how you know when to stop whipping the cream so it doesn't turn to butter.
