To get even cake layers, make sure you use a long serrated sharp knife. You also need a steady hand and good eyes to cut the layer evenly. A cake stand does help so its elevated as you cut and rotate.

Hello Nadia. I would like to know that if I have to transport this cake how do I stabilize the whipping cream? I mean, like the ones we buy from the bakeries most of them use whipping cream in there cakes and pastries everyday, and we buy those cakes and travel in heat but their whipping cream never melts. Hi Aqsa, thanks for your comment. The reason why the cream from stores does not melt is because it is not real fresh whip cream. They use stabilizers (chemicals) to keep it from melting. What I have done in the past when I travel is that I freeze the cake. Depending on how far you need to travel, the time in the freezer will vary. If you driving for about an hour in the heat, then freeze it for at least 2-3 hours.

Hi Samiya, if you actually over beat the whip cream, it will become more liquid than firm or thick. For my baking and decoration, I prefer it to be more thick and firm, especially since I don't use stabilizers and other artificial products to keep the whip cream firm. When whip cream is thick or firm, it is easier to decorate cakes and pastries.

Hi KingLathan, The sugar water is 10 oz of sugar to 250 ml of water. Bring to a boil in a pot, allow to cool and then apply to the cake layers.

Hi, I am assuming that you refrigerated the cake after you made it. If the whip cream is getting watery even in the fridge, then you may have over-beat or under-beat the whip cream. It does take practice to get the right consistency. Keep trying and you will get it perfect.

Fresh whipping cream always needs to be refrigerated. However, before you serve, it is better to have it at room temp. So leave it out for a bit before serving. I suggest about 20 mins out at room temp.

Halima Ali Hi, perhaps its your heavy cream that you use. Try using a different brand. Heavy cream should be plain white and should remain the same color as you whip it.

kmp It sounds like your whip cream was runny. Your whip cream should have a texture and consistency such that it holds and sticks to the cake. Please refer to the fresh whip cream video to ensure it comes out good. Another option is to use butter cream frosting if fresh whip cream is hard for you to work with.
