I adore zucchini and eggplant and cook with them all the time. I love slices of each shallow fried and then dressed with a really zingy vinaigrette and lots of torn soft herbs. Eggplant with fresh tomato passata and basil on a warm summer night for dinner - delicious. I will definitely be making this salad as it looks amazing

I mean you are correct, those are indeed fruits, but vegetables, botanically speaking, don't exist! "Vegetable" is a culinary term, not a botanical one. Potatoes are tubers, carrots are taproots, and broccoli are flowers. So, go in peace, Justine. Vegetable is a social construct and if you say it is a vegetable, then gosh darn it, it is a vegetable! 🫶

There are multiple videos where food content creators explain how exhausted they are at people nitpicking details that are entirely irrelevant, such as the classification of foods. I am not mansplaining for addressing something literally put in the video as a preemptive response to people doing the vegetable v fruit debate, lol All love, but there is no need to point attention to me, Julia 🫶 I am just a woman in STEM who wanted to clear up a common misconception

I just made this for my lunches for this week and Justine, you are a genius! I started eating and realised I had forgotten the oregano, added it in, suddenly everything tasted perfectly balanced - I don’t know how you do it! Just made this tonight for dinner and wow. All things considered - easy, fast, and delicious! Grating the zucchini into the chimichuri was an inspired idea!! And the halloumi was so delish too. Skipped the chickpeas because I wasn't feeling a it and added Poblanos because I had some kicking around in my fridge. Thanks for the great recipe. I'm here for the long form video and can't wait for more!!

My chimi uses both cilantro and parsley and cilantro is my favorite too. Mint is often too strong for me - is there a ‘bad’ mint gene? Lol. Love love love your content! Nice to see a long format this morning and hear the whole process. However I am eggplant skeptical 🤨. Looks delish!

I have a feeling Justine would take strong issue with this framing - her choice is hers alone, and prescribing some kind of “core responsibility” for all women is reductive. We can acknowledge millennia of unpaid femme labor in domestic spaces while also championing the kitchen and homemaking for all!
