My parchment hack is the crumple up the parchment paper into a ball and BAM. It'll fit perfectly into any shaped pan without a fight :)

I have not made this yet, BUT I LOVE your zucchini/banana/olive oil bread (which is now my official go-to recipe- Thank you!!). We had some visitors from Estonia visiting this week for work, and I made it for them - they loved it! (PS- I did cut back on the sugar a wee bit). Now I have the last of summer peaches and can't wait to try this one. Will report back :)

This came at just the right time, my girlfriend and I are sick and she just bought some peaches! They weren't very ripe and the bread still turned out delicious. My one gripe (and maybe I was just a moron for this) would be that you've got to be sure to top with sliced peaches late in the bake or once it's done. I put them on when I put the bread in the oven, and they prevented any of the batter underneath from cooking. Even after another 30 minutes in the oven with the peaches removed, though, it still turned out moist and delicious!

I finally had the chance to make this yesterday (and making this finally gave me an excuse to buy a kitchen scale!) and it is so good! honestly might be better than banana bread, the next time I make the peach loaf ill have to try adding in nuts since the combo usually creates a winner for me. Okay, i already commented on this video, but i just baked this loaf and Justine. This was such an easy recipe!! And the results were fantastic!!!! My only alteration was order of operations; i added all the dry together then combined the wet before dumping into the dry to combine Great recipe!!!!

I made this recipe this morning and it was delicious of course! I topped it with turbinado sugar to give it a muffin like crust instead of putting peach slices on it, I loved it this way but maybe next time I’ll try peach slices

Reporting back: this was amazing. I think you could get by with frozen peaches, but be careful about all the liquid that is released with thawed peaches- you’ll need to adjust. The brown butter also takes a bit, but worth it!

Loving the new long version... The peach pit issue - this happens to me often later in peach season it seems, I seen if I cut along the ridge of the peach which mimics the ridge of the pit, or at least close to it, the pits spilt frequently. But if I still cut the peach in same direction but turn the peach and cut 1/2 way between the ridge and opposite side, there is a lot less problems with the pit. I have thoroughly enjoyed making many of your recipes and have gotten many ideas that I can use in my own kitchens, Thank you

I live in Colorado and the palisade peaches are PERFECT this year! I can’t wait to bake this! The unfortunate thing is that I have to get up at 4am to do it because it’s 100 degrees and I don’t have air conditioning! BUT nevertheless I WILL BAKE 🍑

So, I dont typically like peaches as a snack just eaten from a bowl. But I had some peaches around because of my husband and I made your peach version of nuoc Cham with the spring rolls and I was kinda sold. Turns out, I like peaches in food, but not on its own. I’ll be trying this bread next. I like this long form content style. It does feel like we’re just cooking and chatting. And I can’t wait for the cookbook. Already preordered!

Another reason to use a scale is that flour has a certain amount of water in it and that can make the mass vary. This is especially important when baking bread.

I totally agree with making the recepie exactly the first time and then experimanting and tweaking it. Changing things from the get go is no good cos you might not get what the recepie was going for, or like the concept behind it. Try it once and then, if you want to adjust something to your taste, stubbornly sticking to the original would just be a bit silly.

I am curious about the measurement for the flour? When I look on multiple conversion charts - 1 cup of all purpose flour is 120 grams. 1.5 cups = 180 grams. Thoughts?
