I also used corn tortillas. I stack all of them up on my cutting board and use a butcher knife to cut through all of them..I cut mine into squares.

I’ve made similar, and just letting you know, corn tortillas are better with beef, and flour tortillas are better with chicken. I don’t know why, but they taste better like that.

No no no, don’t cut meat right away. You have to let it rest for 15/20 minutes to redistribute the juices. Besides that they all looked so yummy. Can’t wait to try them all. Thank you 😊

Just a suggestion: I whouldn't have stirred it. Better to use spoon and serve so the cheese does not come out of rigatoni. And yes, i may have used a little more sauce, but you can just heat extra marinara in a pot and spoon over rigatoni

Looks great. However, flour tortillas make it a burrito bake. Corn tortillas is for an enchilada bake. Both would be delicious though.
