What I like about top celebrity chef's is, they travel anywhere in d world, in streets, crowded places walk freely on d road with normal people, meet middle class, to poorest of poor people, n they r accepted with love, with respect n honour. I am not born in Kolhapur but the preparation of mutton even in kolhapur differs from house to house. Like the maratha community would make the mutton different whether tambda or pandra rassa compare to sonar community. Ideally a THECHA is bit upclass as it has groundnuts but the regular fam would have Kharda. Above thali is a mix of non veg and a typical brahmin beg thali.

I do in a same way like pomfret fish is made, but I give a little swist to it by, adding lime juice, kokam or kudampuli for little sourness.

Why dont you travel to kolhapur...I am kolhapuri sad to see you didnt travel to kolhapur to try the authentic kolhapuri. Kolhapuri thali should have for a mutton thali... mutton lonche, mutton sukka, mutton chap, kolhapuri kharda mutton, kheema, rakti, atdi vagdi, kolhapuri mundi, kolhapuri tamda , pandhara rassa , alni bhaat, dahi kanda...veg thali ...is a treat too zunka bhakri, watlu daal, kolhapuri dhapate, rala bhaat, kala vatana, bharli vangi., shepu bhopli bhaji , dahi dudh taak..and much more.. Kolhapuri bad words dont include galis based on mothers and sisters..so dont pass incorret information..education gor first madr compulsory for women in kolhapur, the sarees, gold work and chappals are famous along with misal, wada pav are different, the culture is bit different as people speak directly on the face if you like it or not. Women are treated equally and better..the dalit movement in maharashtra was supported by shahu maharaj also its approgressive city compared to most metros ..that I live in today like pune , mumbai as well....most importantly no one eats lavangi mirchi in kolhapur..fyi mam you dont have clear ideas on kolhapur basic masalas...you are using sikha nariyal ...we use both sukha and wet nariyal. Your cooking style is quiet different.
