Today, I made [KAKIAGE TEMPURA] Marugame UDON style!!
(Deep-fried vegetables with crispy batter.)
It is a popular tempura menu at famous Japanese udon restaurants overseas.
It's crispy and very delicious. There is also a recipe for tempura sauce (๑ • ̀ ㅂ • ́) و✧
【Kakiage Tempura】good for 2-3
Onion 50g/2oz      
Carrot 50g/2oz
Sweet potato 30g/1oz   
Green onion 10g/1oz
potato starch tbsp1
flour tbsp4
water tbsp2
egg yolk 1
【Onion tempura】
Onion 90g/3oz
potato starch tbsp1
flour tbsp4
water tbsp2
egg yolk 1
① Cut the vegetables into julienne
② Put vegetables in a bowl, add potato starch and wheat flour, and mix well.
③ Add egg yolk and water and mix further.
④ Heat the oil to 170 degrees
⑤ Add oil to the spatula and shape the kakiage on it. ⑥ Put the kakiage in oil so that it slides and fry for 30 seconds.
⑥Turn the kakiage over and make a hole with chopsticks.
⑦ After a minute, turn it over again.
⑧ Finally, turn it over again and fry for 30 seconds.
①野菜を千切りに切る
②野菜をボールに入れ、片栗粉、小麦粉を入れよく混ぜる
③卵黄、水を加え更に混ぜる
④油を170度に熱する
⑤ヘラしに油をつけ、その上でかき揚げの形を整える
⑥かき揚げを滑らせるように油に入れ30秒揚げる
⑥かき揚げをひっくり返し、箸で穴を開ける
⑦一分たったら再度ひっくり返す
⑧最後にもう一度ひっくり返し30秒揚げる

If you make a hole, the oil will go inside so you can cook faster.(*^^*)
