My grandparents were from a nearby region and they said the folklore they heard about kefir when they were little children was that kefir was given to Noah and his family at the time of the flood. That God gave Noah kefir because he wasnt allowed to eat any of the animals on the ark during the great flood, so for Noah and his family to survive during the great flood that Noah was permitted by God to collect the milk from the animals and to use the kefir to make just enough food for Noah and his family to survive. And after the flood Noah was instructed by God to guard and pass down kefir to his descendants.

My kefir grains should arrive in 2 days. It's my hope that by end of year all my family will be making kefir and propagating the grains I give them. It's gonna be tough though. Old dogs and tricks and all that.

@@cswann8 That's great! Take it one step at a time. Later be sure to reserve some of your extra grains for emergency back up. I rinse grains in milk, drain on a tea towel/ paper towel, and then freeze in tiny bags/tiny containers, labeled with the date of course.

@@PalinaZ Yes, I've given away grains, frozen some and also just decided to halve them and do 2 jars culturing instead of one. I'm going to have to halve again soon though they're growing so fast. Sadly I can't get my family to get on-board ..because y'know...idiot >.

kefir i guess originated from the silk route n mountains from Himalayas to the Caucasus ,, no wonder there are kefir grains originating in tibet n caucasus mountains ..the culture originated in mountain springs and developed in skin bags carried by the yak sheep and goat herders ..

amazing video , i would love a part 2 or a video about yogurt or healing foods like liver , i have been reading about the people who “discovered” vitamins such as vitamin k and vitamin b3 and what they found was liver cured it, henrik dam for vitamin k , and Conrad Elvehjem for vitamin b3 , i’ve been reading works ,

Have been making our own kefir for years. Love it! I really enjoy the processing of it each day; I almost find it meditative. My husband drinks it every day, but I only have it now and again. 3 years ago I adopted a low carb life style and worry that kefir is too high in carbohydrates (despite knowing that most of the sugars in the milk are consumed during the fermentation process). What I'd like to know is when should kefir be consumed? On an empty stomach, after eating, while eating or before eating? Should we avoid consuming hot food or drinks directly after taking kefir? Will hot food/drink destroy the benefits of the kefir?

Kefir should ideally be consumed on a diet balanced in fat, carbohydrates and protein. Consuming Kefir at any time is good, however I find it benificial to consume Kefir WITH my meals. Hot food or drink won't damage Kefir in the gut. Hope thats helpful!

Kerrie, the best time to drink Kefir is in the morning on an empty stomach. Expect a period of gastrointestinal adjustment. Do _not_ worry about the carbohydrates. You _have_ to have _some_ carbohydrates and the benefits of Kefir outweigh the disadvantages.

Yes Kefir can give you some Herxheimer reactions. Most common is increased mucus and uneasy stomach for a small period.

@@bruh-rr6pl yes, however, I believe that most scientists overcomplicate the process. They are great at figuring out the composition of kefir but they are failing to put themselves in a primitive mindset and time. All kefir is, is fermented milk. It was accidentally fermented when the milk was carried in an animal skin, usually the stomach, when traveling in less than ideal conditions, for an extended period of time. In those times, long journeys required carrying drinks in animal skins. The best part of the animal for that was the stomach due to its natural shape which made it ideal for drinking. It was great for carrying water, however, it had an unusual effect on milk. Animal stomachs have a natural enzyme that curdles milk. Its original function is to help break down the milk consumed by calves. Today, we know that enzyme by its commercial name, rennet. That's how cheese was originally made--by drying the animal stomach and then using the dried stomach lining or tripe (if using cow) to curdle the milk. Given that milk was carried in stomach bags when traveling, its only natural that the enzymes plus the environmental heat would produce a fermented product with a grain culture. Side note, extended heat and the subsequent decrease in natural sugars makes a thick, clear, slimy texture--it looks much like the liquid form of a kefir grain. Adding more milk returns that slime-like consistency to the grain texture in due time. Mind you, I'm no scientist, but I have been making kefir for 13 years. I learned the slime trick one unusually hot summer. I thought my kefir grains were ruined so I did some research and learned that the slime consistency was nothing more than overgrown and starved grains. So I did an experiment. I rinsed half of them and re-fed them; the other half, I just added more milk. The results were incredible! Both specimens surpassed their original size in a span of a few hours (due to how unusally hot it was). In fact, the grains were so massive and plentiful--I didn't know what to do with them! But I digress! 😆 My point is, it can be accomplished if only scientists think outside of their lab.
