During the Great Depression, all of my grandparents learned to save their bacon grease because they couldn't afford waste, and it's a cheap way to add calories when you're doing a lot of physical labor. But my parents never really did it; they grew up in a time when other cooking fats, like canola oil and butter, were readily available and affordable. It's becoming popular again with younger people, and I don't think a lot of pro chefs ever stopped doing it.

@@finridler2199 Okay so it's a quick bread that's sometimes sweetened, sometimes not, but it's made with equal parts cornmeal and flour instead of just regular flour. It's got a great texture that I can only describe as crumbly-ish? Like it shouldn't fall apart in your hand but it's definitely more crumbly than a standard bread. And the top forms into a thin, delicious crust. I make mine with jalapenos baked in and serve it with honey (the only proper cornbread IMO). Check out some recipes online and make it some time because it's so easy and WORTH IT

I’ve lived in the South all my life. It’s good to see that there are Southern BBQ restaurants starting to be found in major cities outside of the South! Because typically when I’ve visited a “southern” BBQ restaurant outside of the South...it was extremely disappointing!
