How is tapioca starch a keto item?

Great question! While starches aren't typically considered Keto, a little bit is required to achieve a light and springy texture in this recipe. And when distributed throughout the entire cake, the carb count is still low enough to be considered keto, coming in at only 5 net carbs per (fairly large!) slice 👍
