This meal is so comforting and oh so good especially on a cold day...really delicious and easy to make.
Serves 5
Nutritional Information per Serving:
Cal: 173| Net Carb: 3.3g | Fibre: 2.7g | Total Carbs: 6g | Fat: 12.2g | Protein: 12.2g
SOUP:
1 tbsp butter
1/3 cup (60g) carrots - diced
1/3 (60g) cup onions - diced
1/3 cup (60g) celery - diced
2 tsp garlic - minced
2 tsp parsley
1 tsp xanthan gum
2 1/2 cup (590ml) chicken broth
2 chicken breasts - cooked and chopped
Optional Extra: Thyme, Pepper, 2tbsp Heavy Cream
DUMPLINGS
3/4 cup (75g) almond flour
1/2 scoop (15g) whey isolate
3/4 tsp xanthan gum
1 tbsp butter - melted
1 tsp baking powder
1 egg
1 tsp parsley
1 tsp oregano
salt/pepper
1 tbsp thyme
