I like this about him as well. A lot of keto recipes I come across are really more things from American culture and it's not really food that appeals to me, like broccoli cheese soup or peanut butter and chocolate combos. I prefer lighter dishes.

Thanks for this recipe video, using cabbage leaves for wrapping is genius! A quick tip for separating the leaves easier - cut the cabbage core out and steam the whole head or dip in boiling water for up to a min to loosen the leaves, repeating as needed.

We have a dish like this in Poland. Meat with rice wrapped in cabbage leaves. I suggest you put the cabbage in boiling water for a couple minutes, much easier to separate the leaves without tearing them when the cabbage has been blanched before.

Thank you very much for the great recipe! The dish looks delicious! In Russia there is a similar dish called 'golubtsy' --> mince + rice mix wrapped in cabbage leaves. By the way if you put a cabbage in hot boiled water and leave it there for 5 or so minutes, the leaf separation will be much easier because the leaves will become softer.

I have never used pandan powder before. I see from Wikipedia that it is used when the aroma of basmati rice is required in a dish. Is this why you used it in the keto recipe? Perhaps, to substitute for the rice taste that would be in the non-keto version? If this is the case, if pandan powder was added to cauliflower rice maybe it would taste more like basmati rice?

hey I actually just picked it up on a whim on my Bangkok trip from the local grocery store. And it smells nothing like basmati rice actually it's more like a green herb than anything else. I use it mostly in oriental cooking. I will try it on cauliflower rice and see just in case but I doubt it.

Headbanger's Kitchen : It sounded far fetched, but that is what Wikipedia reported.

I love the taste of pandan...we lived in Thailand for over 15 years and the Thais use it liberally. My personal fave was just steeping fresh pandan leaves to make a refreshing tea...no sweetener added but goes very nicely with Asian food and the Thais feel it makes one cool down on a hot day. I intend to try and find some now that we are state side and incorporate it into my newly begun keto life.
