1 large egg 1 tbsp coconut oil Just under 1/3 cup peanut butter 1 tsp vanilla extract 1 cup almond flour 3 tbsp erythritol 1/2 tsp baking soda 1/4 tsp baking powder Pinch of salt Chocolate chips Extra sweetener of choice to taste. 325 degrees 8-10 mins Will firm up after baking

@@Latoshajsinspiration 30mins - an hour would be sufficient I would assume, to be safely eaten. You could break one in half to check the temperature before trying them.

Man I just wanna thank you for your channel and making these recipes so easy and fun to follow. I've been following a keto approach for over a year now, but every now and then it gets boring eating only whole foods and was finding myself getting out of keto because of occasional treats. This is exactly what I needed to stay healthy and on track. Thank you once again and keep up the good work!

Great looking cookies....just a little something I wanted to mention....eggs should always be a room temp for baking and when you don't have time to wait, just put them in some warm water and it will help get them there AND if you're using parchment paper there really is no need to spray it...I bake a lot and I've never had anything stick to parchment paper....I just thought I'd save you a few puffs of the spray! Loved those Breakfast Scones you made and the Low Carb Keto Cinnamon Sugar Doughnuts (sorry I'm from Canada and that's how we spell that word eh -haha)........delicious!

you can find almond flour at Walmart, it has 1 gram carb. and I use butter in my cookies instead of coconut oil because my husband doesn't like coconut oil I also use brown Swerve

My son makes peanut butter, walnut butter, almond and other nut butters and whipped butter from heavy cream in the food processor, it's awesome.. sugar free always. And tastes so much better than the store bought.

This was so good. I have made it several times. I did bakers the first two time b4 getting the lily's. Then I made with lily's. The other day i ran out of almond flour. I was 20g shy of the full amount i needed (i double recipe) so all i had was coconut flour-course. I was afraid it would not hold but yes it did and the cookies had some coconut flavor and it added a little extra sweetness. Best thing to make and save. Doesnt last a week tho... this last batch my whole family was eating it.

Here's the thing about eating in general, WHATEVER it is, eating as an action spikes insulin, not much(what you eat is additional) but make sure if you consume these it's near your eating times with full meals.

In a pinch, I nibble raw coconut butter or manna (whole coconut ground smooth). It's naturally sweet enough to ease the craving and very filling so I don't eat too much

I have to say..I made these and I really love the texture but I can taste the baking soda and baking powder....I'll sift those two ingredients next batch I make. I might also want to swap one spoon full of confectioners sweetener for some Monkfruit sweetener. This was my first keto cookie I ever made..it's very easy to make too. So thanks again

Have you added beef gelatin powder to them for chewiness- not much but can make them more chewy if you like it that’s way!

I made mine in the air fryer the first time. Making some right now but it didn't turn iut the same texture. I did something wrong I guess. So,I added butter instead. I added more butter and another eggs because it was on the dryer side. Not sure if it was using the butter instead of coconut oil. I will see how it turns out. Using the oven this time.

Also another side note...if you use parchment paper you don't have to use baking spray on your sheet. Always use parchment paper y'all it should be a kitchen holy grail item

You could probably use avocado oil or MCT oil or even melted butter.

I find that most keto cookie recipes that I've tried aren't chewy enough for my liking so I like to add 1 tsp or tbsp (depending on how chewy you like it) of gelatin/agar/tapioca powder (depends on vegan or not and how sensitive you are to carbs), to the batter. I admit I haven't tried this specific recipe so take my advice with a grain of salt, just speaking from my year of experience.This looks like a good recipe, I'll give it a go.

@@edsvfr800fi I think it's safer to dissolve the agar in hot water first then add it to the wet mixture because it needs more heat to dissolve than just straight baking the dry agar powder in the batter.

Playa Made If you want to use coconut flour, you would have to use much less than the almond flour. Coconut flour absorbs liquid like crazy and you’ll end up with really dry cookies if you try to sub with an equal amount of coconut flour.

I’ve looked into it John...just couldn’t get the ingredients I need at the store. I’d have to order some stuff online and just haven’t got to it yet. The other thing was the cost, making them myself would almost cost as much as buying them 😔
