There are a few things I discovered while making this recipe: 1. Cut your slices VERY thin and use a mandoline to do this. If they are not thin enough, they will either be leathery or hard -- but not crispy. 2. Slice the jicama perpendicular to the root end. I don't know why this is, but the chips turn out crispier this way. 3. The "brining" step helps the chips become crispy in the dehydrator. I'm assuming it has to do with the salt drawing out moisture. 4. A temp setting of 110F - 115F is important. I found that higher temperatures just didn't crisp up properly.

I was so excited initially to see the chip episode I’ve been anticipating since your original potato alternative video. Alas without making these myself just from the process it seems that this would be very much a Vinegar & Salt as opposed to traditional or “regular“ potato chip which is quite disappointing. Also I’m not entirely sure but I’m fairly confident that the dehydrator I already own does not go as low as 110° and that it’s not a controllable temperature setting at all… without getting out the manual I can’t be 100% certain but I believe the static temperature default is 165° maybe? Bummer.

@@manofsan Jicama has a slightly sweet taste compared to Potato chips, to my taste buds. But they really take on herbs and spices well! I use smoked paprika, cumin, and Tajin (which is a lime spicy salt combo). They don't get as light and airy as a potato chip, so a little more dense, but they still give good crunch. If you have ever had Terra chips, or thin plantain chips, they are kind of similar in texture to those. ☺

@@manofsan Here is my best no- potato Hashbrowns recipe: 100g grated cauliflower 100g grated radishes 1 egg 1/4 cup grated parmesan 1/2 tsp salt 1/2 tsp pepper Grate cauliflower and radishes. Microwave for 3 minutes, then squeeze out moisture using a cheesecloth or towel. Mix drained veggies with egg, parmesan, salt and pepper. Form into patties and pan fry for 5 minutes per side in oil until crispy. Use a non-stick skillet and generous oil to get them crispy Let them cool 5 minutes after cooking to set Can add bacon, onions or other mix-ins. Here is my favorite Mashed No-Tatoes: 6 egg whites 1/2 cup grated parmesan cheese 1/2 cup shredded cheddar cheese 1/4 cup cream cheese 2 tbsp beef gelatin powder 1 tsp salt 1/2 tsp garlic powder 1/4 tsp white pepper Toast the beef gelatin powder lightly in a dry skillet until fragrant. In a bowl, whisk together the egg whites and toasted gelatin until fully dissolved and frothy. Microwave the egg white mixture for 2 minutes, whisk vigorously, then microwave for 1 more minute. Add in the parmesan, cheddar, cream cheese, salt, garlic powder and white pepper. Use a hand mixer to whip everything together until thick, fluffy and smooth

Since I bought an air fryer, I've been making beet and rutabaga fries often. Cut into fry shapes, brush with oil, and cook at 250 until they are cooked, then turn the temp up to 400 for 10 minutes.

Jicama also makes a great tortilla if you happen to have a meat slicer (I bought a cheap one off Amazon for $45). I would slice them thin and then lightly toast them in a pan to soften them up so they were pliable. Jicama also makes a good Korean radish substitute for Radish kimchi, if you don't have it around. When I was living in Mexico I had zero Korean radish but heaps of jicama. :) Drizzled with a little lime juice, it also can mimic apple in some summery salad dishes.

I just made a cowboy casserole out of jicama. I pressure cook my slices of potato size slices of jicama. Then I salt them. Let them set in fridge until I needed them. I browned my hamburger, diced onion, seasonings. Put in casserole dish put meat in casserole cream of soup. Then jicama slices. Thin slices of carrots, Pepper , salt to taste. Stirred well. Put in oven after putting a couple pats of butter on top. Baked 20 min at 350. Exactly like my cowboy casserole with pots. Cheese melted on top if you like.

I haven't heard of jicama here in Canada...but it looks like daikon (lo bok) radish which I use to make a gratin cause they taste ans feel like potatoes when cooked...so I'm going to try using that for these chips...plus they Daikin are already in that circular potato shape. We finally got some jicama and made this recipe. Since we didn't have a newer fancy dehydrator, we were forced to use our old K-Tel dehydrator (no fan or temp control) so it took more like 15 hours but we were impressed with the taste, sadly the portions are small compared to what most people are used to when they think of chips. This gave us another snack for good variety to have ready to eat. Thanks for what you do.

There are several sites suggesting that you can reuse desiccant packets by running them through the oven. I would think the dehydrator would work as well, although maybe it needs to be hotter than that. One suggestion is to use a vacuum pump; this might work, but most high quality vacuum pumps don't won't water vapor running through them - they get water in the vacuum oil, and it limits the maximum vacuum drawn in the future. Not a problem in Colorado, though.

Jicama is very popular here and really delicious. One of the trendy Restaurants in Merida gets very fresh, very young jicama, slices it really thin like you did, and then rolls a filling inside, like a local Fresh Spring Roll. Really good. Here too, we get them fresh from the ground and they do not have that thick tough skin on the outside. Frequently served cut in sticks with carrots cut in sticks as well marinated in a good vinegar at least overnight. Finger food heaven. Thanks for this. I love my Excalibur Dehydrator. Brought it with me. We use it to make Keto Candied Ginger too! Yummy good treat. Thanks again!

Sadly turns out I don’t like the vinegar flavor and it took over 48 hours on my dehydrator so next time I am going to increase the temperature. I bought another jicama and will try again without the vinegar. 🤞🏻

A good substitute for chips (fries) is to use swede, I think in the U.S. it's arugula. Just peel, cut into the size you want, par boil for a few minutes until tender. Then strain them and dry them off. Toss them in a bowl with some olive or avocado oil (even melted lard/tallow) with salt, pepper and any herbs or spices you like until evenly coated. Then simply lay out in an air fryer and cook at 200°C (around 400°F) for 15 minutes, checking after 10 minutes and turning them. The cooking time will depend on the size you've cut them. You can also do them in a normal oven, but an air fryer gives better results. Hope this is useful to anyone reading the comments.

Try using Tajin seasoning on the chips. I enjoy simple sliced jicama with Tajin. They're crunchy, slightly spicy, and tend to disappear all too quickly.

You might be able to do them in an oven on the lowest bake setting (170 F?). I use an oven to make beef jerky and it comes out perfect. For the jerky I use 180 F. The trick is opening the door periodically to let the steam out.

If you have a convection oven, you can use it as a dehydrator. Granted, it is not as energy efficient, but the advantage is that it's usually pretty big, which helps with big batches. 😉

I also did a video on oven thermostat calibration, which could be used to "hack" your oven into going down to a lower (more dehydrator like) temperature than it may otherwise be capable of.

Canada = chips as in fish and chips but then we also have chips like potato chips and french fries thanks to our neighbors to the south. Yes, we add a u in neighbour :)

As a Brit, fish and chips is a MUST for me. It's hard on keto, but I've just posted my swede chips recipe above. For a batter to coat the fish, use whey protein isolate instead of flour, a teaspoon of baking powder or soda and mix with sparkling water or diet lemonade to the consistency you like. Then fry in a couple of inches of lard/tallow in a deep pan. It's the nearest you'll get to British fish and chips on keto. Hope you try it.

I really like jicama but raw, I can eat the entire thing because it's so nice and crunchy. I'm going to try these and then try to practice some restraint and not eat them all in one sitting!

This sounds great, but I have 2 problems . Living in Hawaii (Big Island) finding fresh Hicama and power ( 40 cents a kwh) makes it prohibitive.

In Texas, we have a store called HEB that sells thin sliced jicama that I've used raw as a substitute for a tortilla. Obviously, it's wet-ish, but it has such a fresh taste that brightens up a "taco."

I ate a lot of the vinegar/salt soaked slices as I loaded up the dehydrator trays. "Oops, that one broke -- I guess I'll just have to eat it." 😄

just an FYI for all you folks who don't have dehydrators, you can use your oven! check your manual and see how, my oven actually has a 'drying' setting...for gas ovens this is often just using the pilot light, for electric (like mine) you can dial them down very low. It doesn't cost too much to run an oven for several hours...my oven (Jenn-Air) costs about .35 (cents) an hour so it's worth it to me to run an oven to make jerkey or other items (Jicima chips!) for 6 or 8 hrs!

Enjoyed the video Steve...unfortunately, I won't be making these anytime soon. I am one of those who don't have room to store a dehydrator and probably wouldn't use it enough to get pay back for the cost of one! Although I am purchasing an outdoor "dehydrator" (screened one) to dry my herbs which I plant every year. Don't know how it will work or if it will do good, but for the price it's worth the try. After all....it was the way our ancestors did it...outdoors!

Sometimes, I get a little obsessed with proving that something CAN be done (or keto-fied). This seems like a lot of work, but once you taste one and you get that crispy potato chip sensation, I think the payoff is worth it. Thanks for the comment. 🙂👍

I have wanted an Excalibur 9 tray for years. I have just a plain Nesco dehyrdator that doesn't even have temp control on it. Unfortunately, it is in storage since I moved back in with my parents. But I used to use it all the time. This makes me want an Excalibur even more now. LOL! I would use onion powder.

Mine are soaking now. I may have to get a new mandolin - my thinnest setting is thicker than yours. I'm hoping they're not leathery or tough. Hoping for sturdy, like corn chips! I'm sure I'll have to dehydrate longer, too. At least if they're too thick and don't come out good, a wasted jicama wasn't too expensive!

Try a baked fry recipe. You could call for finishing them off by pan frying with lard

I'm here to tell you, I've tried every cooking combination I can think of to get a jicama fry. My best version was still nowhere near a recipe that I'd be proud of.
