Thanks Stormy. Yep the fibre hikes up the total carbs but alot of my subscribers are diabetic and have tested the clean keto flour. No insulin spikes so far.

Hello Janet. I've only ever uses it to bloom yeast. The yeast feeds off the sugar and we don't ingest it. You are allowed up to 50g sugars per day (please Google I you wish). I use mine up mostly using sweetener

The reason puff pastry works is because of the non-butter part of butter (the water). The water turns to steam and puffs up. Which is probably why I can’t make this nondairy/vegan coconut oil is all fat and no water. Bummer. I’m going to have to pass on a bunch of great recipes. 😢😢😢

This puff pastry puffs up because of the baking powder and yeast. I think keto dough is too heavy for the butter to work like that. Have you ever tried vegan butter? lovingitvegan.com/homemade-vegan-butter/#recipe

I actually have that recipe!! I have another recipe which I made the other day. I was going to make this one, but I went back to the tried and true. I could eat it with a spoon. It is so so good! I will have to try this recipe to see if it’s better or easier. Thank you very much. OK, I will try it. The benefit of this one is that you can use almond milk. For the other one, they don’t want you using almond milk-oat milk or soy. Thicker milks. I used oat milkwhich is higher carb. Thank you for your reply.

@@CookwithMel1 i am tring a half batch today. I have had the dry ingredients in my fridge since this video came out. I have never made laminated dough, so I am a bit nervous I think i have a happy accident. I didn’t see anything about freezing butter in my instructions. Which is great because I am able to brush soft coconut oil (not liquid). on the dough. I might have done 4-5 layers to ise up the coconut oil. Very oily dough now. It’s in the fridge for baking tomorrow. I plan on croissants with my Nutella. Thank you for all your hard work, Mel
