Brings back a lot of good memories. Can remember my father using a machete and bare foot to clean big gars. My mother would fry the gar balls just like you with a lot of green onions and then add them to a brown gravy. You look familiar. I've lived in Louisiana all my life. Keep up the great video's

You can skip the step cutting off the head and cut the skin down to wear its opened up like wings and make a little slit and run your fingers down the ridge and the meat comes almost off then cut the rest of the way and pull it off. I was amazed the first time I did it how easy those filets just come right off and boneless

My daddy made a board similar to the one you used. It fit across the gunwales of the aluminum boat we had. He would clean the gars on it while we were waiting for more gars to hit the net (this was back when you could gill net them in south Louisiana). My mom would make the gar balls, roll them in a little flour and pan fry them then make a gravy from the roux formed from the flour falling off the boulettes. Eat that with some rice sa c’est bon!! We would also take the filets and just season them and pan fry them. Much better than frying in fish fry. Also, if you catch a few take a spoon and scrape the bones, you’ll get more meat for the boulettes. Enjoying the channel.

I just take a carpenter’s hand saw and cut crosswise 2” slabs. Then it’s easy to take a knife to cut out the meat into steaks or grind into gar balls.

When I used to fish at the Everglades when I kid with my grandpa he told me that gar wasn’t good to catch. I wish he was alive so that we could watch this video together. My thinking is that maybe it’s a lot of work to prepare and he didn’t want to mess with that. Awesome video
