Technique and recipe was spot on. Added grated ginger to the garlic just for kicks, and it worked well. Would love to have a commercial kitchen-strength gas hob!...sigh

What I'll never be able to do is accurately judge time like that. I mean the first ingredient goes in the pan at 2:23 and he says all done at 3:21 and "reckons that was about a minute". HOW?

It's a high power burner.

@@KhoanVong No I mean you managed to judge exactly 1 minute in your head, almost to the second, without using a timer. When I'm cooking I can't remember how long anything has been in the pan. It could have been in there a minute...could have been 5...who knows?
