I hope that everyone watching this video realizes that this man is a genius and a national treasure. Imagine having Albert Einstein teach you basic arithmetic, all the way through advanced nuclear physics. That, in the kitchen, is what what we have all been gifted by the great Jacques Pepin. Now realize that he been an instructor for more than half a century and all of his techniques are available to the world both for purchase and, in many cases, for free. Chef, you have changed countless lives for the better and you are owed an endless amount of gratitude. On behalf of mankind, thank you!

Jay, you have put the essentials of gratitude in the right words to the most merited recipient for his quality of work and simplicity of communication in the teaching. Most of us, cooks or not cooks, want always to learn some essentials of decent cooking as well as learning some principals of maths and physics. We all were lucky enough to arrive at this video presentation, and we've got impregnated with the taste to follow his lead. @@fortazerty you can also put a whole egg, mustard lemon, seasoning into a narrow high container, blend it with a stick mixer, dump in a good quantity air oil and then blend and at the same time pull up slowly so the mixing blades pill in a little oil at the time, my mom showed me that and it's like magic. (I failed at the first attempt, because I was impatient and gave up too early, but well, everything working on the first try would be boring 😂) I like making my own mayonnaise but one egg yields for me about half a liter of mayo, and I alone can't eat that much at once, and self made mayo sadly doesn't keep that long 🥺

This guy's skill with cutting meat is unreal. Makes me feel like I don't know anything. I don't want to be a chef but I would love to find a class that teaches these techniques. I think its an important skill to have, considering the price of meat these days. If you have this kind of skill with the knife, you can buy fish and poultry whole and save a lot of money.

Oh I love artichokes AND lobster! My fave artichokes are just blanched in acidulated water and grilled. Remove choke after grilled. It’s super easy. Lobster just boil and let everyone deal with their own lobster 😂

I have watched him for years.. have his first few cookbooks before the internet.. love his boigrphical information....no chef can touch him on any level. I started watching him 30 years ago on PBS.

Astounding stuff. The specific techniques here are so difficult to find online without (I suppose) enrolling in a classical French culinary school. I'm a professional knife sharpener and I've learned more about the use of a knife in the first 20 minutes of this than I ever have talking to chefs I visit with.

I love this man, I practice his omelette technique almost every day, still can't do it as well as he can. But this is the amazing thing, I have been eating omelette all my life and never had it the way he makes it. I will never make it any other way now. Such knowledge and humility. I got tired of just copying recipes and having to buy ingredients for one dish that breaks the bank. Thus I started teaching myself techniques so that I won't have to be reliant on some celebrity chef's cookbook and stumbled upon this. This is pure gold. Learning so much, will definitely watch this over and over to infinity.
