Made this tonight. OMG it was delicious. I was making this for a dinner party so I cooked everything ahead of time except adding the red and green peppers and julienned carrots. When I was ready, I added the peppers and carrots, heated it up and then added the fish sauce and brown sugar. The vegetables weren’t over cooked and the meal was delicious. Everyone loved it. This recipe is definitely a repeater and keeper.

I just made some. And I had a huge bag of thighs and drums that I just wanted to get rid of. It took so long for me to get that raw meat off 😭. Not the thrillest touching it, & continuously cleaning everything around. Bc I felt like just smelling it was gonna make me sick. But cutting ginger, garlic, & peppers made it so much more longer of a process. I just kind of winged it. Had it on high, then turned low, while cutting everything up. & It turned out so good. My munchkins doing a I'm eating yummy food & it makes me happy dance. Doing half way floor angels. Also, I put fish sauce in there as well. I figured I wouldn't taste it. & I think I bought cilantro for no real reason at all

What a successful meal I made from a package of costco chicken thighs. I didn't have the cilantro [coriander] leaves or the thai chili peppers-so i used some of my garden fennel leaves. Was scared to use expired fish sauce so used your suggestion of Tamari sauce .... not as expired...lol. Thank you for recipe and all the helpful comments here.

Coconut cream/coconut milk or I just can use milk ?
@KitchenKravings27 күн бұрын
@@duhsakikhawlhring9235 While you can technically use regular milk as a substitute, it will significantly alter the flavor and texture of the dish. Coconut milk adds richness and a distinctive creamy, mildly sweet taste that’s essential to the authenticity of Thai curries. Regular milk is much thinner and doesn't have that signature coconut flavor, so the curry may end up less rich and less flavorful. If you don't have coconut milk, you could try using a combination of regular milk and a little cream to add richness, but the result will still be quite different from the traditional version. Another option is to use a plant-based milk (like almond milk) with some added coconut extract to mimic the flavor of coconut milk.

alternate to redcurry paste ?
@KitchenKravings3 ай бұрын
@@rahulroy-yt3wh Hi Rahul! An alternative to red curry paste can be made using a combination of common ingredients that mimic its flavors. Here's a quick substitute: Red Curry Paste Alternative / Homemade 2 tablespoons chili powder (preferably mild or medium) 1 tablespoon paprika (for color) 1 teaspoon ground cumin 1 teaspoon ground coriander 1 teaspoon garlic powder or 1 clove of minced garlic 1 teaspoon ginger powder or 1 inch of fresh ginger, minced 1 tablespoon soy sauce or fish sauce (for umami) 1 teaspoon lemongrass paste or zest of 1 lime (optional for extra flavor) 1 teaspoon onion powder or 1 small shallot, minced Mix all these ingredients together to form a paste. You can adjust the amounts according to taste. This mixture won't replicate the exact flavor of store-bought red curry paste, but it will provide a similar profile that works well in recipes.

can i use dried leaves?
@KitchenKravings3 ай бұрын
Dried coriander leaves, often called cilantro, can be used as a substitute, but they won't have the same fresh flavor as fresh coriander leaves and stems. If possible, use fresh coriander leaves for the best taste. If you only have dried leaves, you can use them, but consider adding them early in the cooking process to release their flavor.

Is there an alternate to fish sauce?
@KitchenKravings2 ай бұрын
Yes, there are a few alternatives to fish sauce. Depending on the flavor you're aiming for, you can use soy sauce or tamari for a similar salty, umami taste. If you want to replicate the fishy element, a mix of soy sauce with a bit of lime juice or seaweed can work well. For a vegan option, you can use a combination of soy sauce, mushroom broth, and a touch of vinegar. While these alternatives can mimic the salty and umami flavors of fish sauce, they may not fully replicate its distinct taste. If the recipe relies heavily on fish sauce for flavor, the final dish might taste a bit different.

Chicken saussage can be used?
@KitchenKravings6 ай бұрын
Yes, you can use chicken sausage alongside the regular boneless chicken. However, if you're using chicken sausage instead of the boneless chicken, be aware that it will have a different flavor and texture. Chicken sausage tends to be less juicy compared to boneless chicken

@KitchenKravings5 ай бұрын
Yes, you can use full cream milk in Thai chicken curry. It will make the curry richer and creamier. However, if you want to achieve the traditional taste and texture, coconut milk or cream is usually preferred in Thai cuisine.

Can i use soy sauce in place of fish sauce?
@KitchenKravings6 ай бұрын
If you are a vegetarian or vegan, then yes, you can substitute soy sauce for fish sauce, but be aware that it will alter the flavor slightly. Soy sauce tends to be saltier and lacks the distinct fishy flavor of fish sauce, so you may need to adjust the amount to taste. Or you may skip the fish sauce altogether to maintain the original flavor profile of the dish.
