Gordon knows that it isn't the server's fault. Hell, he isn't all that mean to the owners, when you get down to it. He doesn't sugar coat the truth. These places serve food that is truly awful. All from canned, premade/frozen, and over cooked. Personally, I'd love to have Gordon Ramsey critique my cooking because I bet I'd learn a hell of a lot. I can at least say my cooking is better than these places; though, I'm not going to be winning any prizes.

Fyi, if you do not want your pasta to stick together, keep on moving and stirring the pasta in the boiling water, so the starch won't stick.

Yeah especially to the ones who are honest and upfront with him. I think there was one waiter who apologized for the food and Gordon said something like "Not your fault", it's kind of nice to see that he acknowledges that the waiters have nothing to do in the process of cooking, it would be pretty easy for most people to blame them, they're the face of the food in some way lol.
