The reason he is so brutally honest is probably because of his teachers and mentors in the culinary world. In his Hot Ones interview he talks about some of those chefs constantly yelling and throwing things and so he probably associates working in a kitchen with those experiences. Honestly, I think he probably gets his compassion from his parents and childhood because he knows what it's like to struggle.
