Plus in a restaurant there's the pressure to get it right, cooks have have been going at it for hours and you do not want to leave customers waiting. The one weakness I think he has is in not recognizing food that is "good enough". Lots of people who eat out cant tell the difference between fresh food or frozen, or how it was prepared. Spending extra on the kitchen for something the customer doesn't care about doesn't make business sense. If you have a low cost restaurant for low income customers, they won't mind the corner cutting so long as the food is tasty and fairly priced. Not every restaurant has to be run as if its fine dining.
