Ingredients:
6 portions Koral leaves (discard the stems)
3 onions, finely chopped
4 green chilies, vertically sliced
7-8 garlic cloves, chopped
Pinch of asafoetida
1/2 tsp turmeric powder
Salt to taste
1/2 tsp sugar
Oil for cooking
Instructions:
Wash and break the Koral leaves into small pieces.

Add asafoetida and saute for a few seconds.
Add garlic and saute until fragrant.
Add onions and cook until softened and translucent.
Add turmeric powder and mix well.
Add green chilies and saute for a minute.
Add the Koral leaves and mix well with the spices.
Cover the pan and cook on low flame for 1 minute.
Open the lid, add salt and sugar, and stir-fry
for another minute.
Cover again and cook for another 30 seconds.
Your Koral Bhaji is ready! Serve hot with rice or roti.
Tips:
You can adjust the amount of chilies based on your spice preference.
For a richer flavor, you can add a teaspoon of grated ginger along with the garlic.
Some variations add a squeeze of lemon juice at the end for a tangy touch.
