A small bone to pick with this video. The working of the Moka Pot is oft misunderstood. What happens in the lower chamber is that a small quantity of water gets converted to steam. The steam exerts what is technically known as "vapour pressure" on the remaining water, and it is hot water (with a negligible amount of steam) that is forced by the vapour pressure through the layer of coffee. The amount of condensation happening in the hot environment within the moka pot has negligible impact on the working of the MP. In fact, the image at 9:56 captures the working of the MP very well with the differently coloured arrows.

10:38 Espresso in Italian does not mean "express", and actually means "pressed out" because the coffee is extracted with pressure

Always love the show. Abit of a correction on the graph about the origin of Robusta. It's cradle is Uganda, about 1221 species of Coffea Canephora(Robusta) can be traced to Kibaale Forest National Park. Its the largest Chimpanzee Sanctuary in the world.

Only a very small amount of water is converted to steam in the bottom chamber of a moka pot. The steam raises the pressure are literally pushes out the remaining water in the bottom chamber through the coffee bed. There is no significant conversion/condensation of steam back into water during this process. I realize that a correction is posted in the video description but it still misses the mark. The reason the moka pot can produce a strong cup of coffee relative to drip is primarily due to the small water to coffee ratio, and to lesser extent due to the larger operating pressures (though nowhere near espresso), and not because of steam.

I visited Baba Budankari peak in Chikkamanglur 2 yrs ago and never knew that a story about my favorite beverage is attached to this man, Baba you sly smuggler!.

It's actually Baba Budangiri, which translates to "The hill of Baba Budan". Legend has it that Baba Budan hid 7 coffee beans in his long sleeve and stitched the sleeve, and smuggled it to Chikkamagaluru and planted it there, giving Indians this magical brew... Cheers!

I've been consuming coffee for past 10 yrs. Tried various methods. For black coffee I find light to medium roast brewed in French press just perfect. For milk ones I go with medium to dark roast, preferably in espresso maker. If not that, then go with moka pot, although it tends to burn coffee if not done carefully.

I’ve watched plenty of Hoffman videos and I’m deep into specialty coffee rabbit hole having accumulated a bunch of manual brewers and various light roast high scoring coffees. Yet I found this video intriguing and informative. It might be too much to ask but can you please do more deep dive into the world of coffee? 😃

can i ask where you source water in india? i haven't even tried making espresso in india because the water is terrible and i cant even get hold of even distilled water and use third wave water minerals.

I’m not into espresso yet. I’m currently into manual brewing using V60, Hario Switch, AeroPress and MokaPot. I just do espresso like stuff using Cafflano Kompresso for practice but it isn’t anywhere closer to a real espresso. Regarding water, I current use RO water but before I get into espresso I may need to look into third wave water or so.

As usual your videos are top notch. A shop called "7 BEAN COFFEE" which is located in Red cross road, egmore, chennai has all kind of coffees which is mentioned in this video. Did you know the difference between a Long Black and an Americano? A Long Black is brewed by pouring an espresso over hot water while an Americano is brewed by pouring hot water over the espresso

Great stuff! Your less verbose version vis-a-vis James Hoffman's erudite yet meandering musings meant - the attention span was not challenged in any sort of compelling manner. 😉 A small note here - while you did mention the adenosine receptors, a small mention of the minimum time period one has to wait before consuming the morning caffeine shot would have been instructive to those who reach for a cup even before they get out of the bed.

A fitting tribute for my beloved beverage. My 37.50 rubees (1 cup at AAB) : Turkish coffee made with Ibrik is pure nectar. Globally to get rid of bitter tasting coffee (gone wild during roasting or bad quality crop) the roasters added spices and or sugar and thats how hoi polloi also participated in the party of coffee habit without spending too much....Green beans are used in Kehwa to make arabic coffee. Highlighting cos these add up to the Milk-free-coffee movement. Earlier versions of Instant coffee they made Slabs of the extracted coffee, brought the temp down and then powdered and filled...blah blah blah. Stop !!!! Considering the Filter coffee was well accepted and incorporated into their daily ritual by the Tamil Brahmins, i wonder how did the 7Beans Baba Budan made his permanent stop in the houses.....Please help when time permits ... thanks for the masterclass....ps : poor cousin Chico is craving for attention

Dr Mathew walker has addressed the phenomenon of people who can drink coffee and sleep immediately. While some individuals can fall asleep and stay asleep after consuming caffeine, they are not exempt from its deeper effects. Walker explains that even if someone can seemingly sleep without issue, caffeine can still significantly reduce the quality of their deep sleep. Studies show that caffeine consumption in the evening can decrease deep sleep by 20-40%, which is akin to aging the brain by 10-15 years in deep sleep reduction. Moreover, Walker emphasizes that one may not consciously perceive the deficit in deep sleep. People can believe they slept well but still miss out on the refreshing and restorative benefits of deep sleep stages 3. This impact is due to caffeine's half-life of about 5-6 hours, meaning that significant levels of caffeine remain in the system for many hours after consumption

Great video. I am surprised that you didn’t mention that the brain adapts to regular caffeine intake by creating more adenosine receptors so impact is diminished. My understanding is that for alertness it is best to have caffeine in irregular doses, only having it when you most need it. Feel free to correct me, if I have misunderstood. Thanks for your videos.

A separate video on Kopi Luwak perhaps? 😊 On a separate topic, would it possible to do a video on the role of tadka (the specific combination of oil, mustard, hing, urad dal, channa dal) in South Indian cooking pls? Some people add tadka once after the cooking is done while some start with tadka and start adding veggies, dhal, sambar masala etc to the tadka and cook. Which of the two ways is better /beneficial & why? Thanks.

Also krish, i like my coffee strong, ( i make filter coffee decoction) So i use 70-30 and if available 60-40 ration. Did you think the chicory is too much n harmful? Pl reply.

Personal taste, for me high chicory becomes like some random flavored drink, instead of coffee itself. I prefer no chicory or upto 15-30% for variety occasionally. In instant, try Continental Xtra 30% (don't buy packets, buy a jar, recently i found a trend across brands that they might be cheating with lower quality or stale/old matter in smaller packets) Try 20% chicory filter coffee powders from VS Mani & Continental Malgudi. Also try, for a change "Lavazza Il Mattino Vivace" (no chicory, so you need to add 1 or 2 more spoons extra to compensate for lack of chicory), a pure coffee experience. Remember that chicory adds a different taste & flavor to coffee, which some of us enjoy, at least sometimes if not daily, BUT it IS a way for companies to mask low quality coffee and make profits from masses.

Wow that cleared lot of things, excellent explanations as usual. On caffein affecting sleep, i can have coffee and sleep but if i drink more than 2 glass of coffee a day then it affects. Regular Indian coffee drinker may not like black coffee. If caffein is not so good then energy drinks are still not good to have is it?

- Timing is key. For most people, caffeine will metabolize in max 6-10 hours. But black or not, it is better to finish coffee intake before lunch. Except for rare fast-caffeine-metaboliser people who can drink in the evening or even night & sleep fine. Sleep is a top factor for health, so why take risk with late caffeine. Some experts say, some people think they sleep fine after caffeine BUT the quality of sleep is affected, they may not get much of the deep/stage-3 sleep. - Most Indians do not overdose on caffeine (max limit is 400 mg per day). Usual instant coffee powders like Nescafe have around 70 mg per 2 gram powder. Robusta can have double the caffeine thats in Arabica. - Caffeine blocks drowsiness (the adenosine stuff), so can improve activity/performance/productivity when taken after breakfast and used in moderation. It also has analgesic properties hence you see it in some pain-killer tablets alongside other ingredients like paracetamol, ibuprofen. - "Energy drinks" like sting & thumsup charged contain 72 mg caffeine per usual small bottle. Again, here what is perceived as "energy" is the removal of drowsiness load.

Not sure if its mentioned here in the comments but robusta is "robust" because it's a cross-pollinating plant, robusta is mostly self-pollinating. Robusta has greater genetic diversity and hence, has a little of everything but arabica is concentrated and focused into itself
