JESSICA YES, I CRACKED THE CODE ON MAKING VEGAN CHOWDERS taste and look just like dairy cream chowders! Cashews make the best sauces. I'm a vegan personal chef, have a current client, made a corn potato chowder today and added a sauce made from cashews, violife cheddar (about 1/2 cup to whole pot of soup, not too much), nutritional yeast, onion and garlic powder, black pepper and braggs aminos. It made this chowder exactly like a dairy cream soup. I've made lots of vegan chowders, but this was the first one that was exactly like a dairy chowder!

Request- one day maybe do a batch cooking session that shares lots of prep, steps, and base recipes then branches out. For example, when my kids were little I would use 3 crockpots to make pastasauce, tomato soup, and chili all at once...

I need to start keeping silken tofu in the house, I use cashews all the time to make sauces. And I've used tofu to make 'cheese cake' and puddings. Definitely a good way of cutting the calories. Adding to my shopping list now! 👍

I made this last night to serve at Christmas. That sauce is SO delicious. It totally reminds me of ye old Campbell’s Soup (I mean that as a compliment) that’s so often used for casseroles but is so unhealthy. Major kudos and thank you!

Thank you for doing all the research and work of the trial and error part of creating a recipe. I just started last week trying to figure out how to create a plant base "soup" for such things as casserole. I am going to make this soon. I need to wait to go to the grocery store until the " need" is there with the Corona issue going on at the present time. I will let you know how well it worked. Again, Thank You!

Sour cream is definitely a whole food. Interesting how plant based eaters - a lot of them - don't look very healthy. Since moving to Keto and then to Carnivore, I feel like I am 30 and I am 57. I have 8 autoimmune diseases and have been miserable most of my life. Carnivore has saved my life. Thankful I found it. Takes me 10 minutes to make a meal. I am almost at goal from 250 pounds. I am pain free. I am impressed at what you both have done, but am wondering how you FEEL and if your weight loss has stalled.

I like your soup sub and will try it. We’ve been buying a mix on line to sub the soup in green bean casserole, so this might be nice. I altered our family recipes in steps. I started by removing butter. Stuffing butter was replaced with veggie broth and sweet potato casserole was easy I didn’t substitute the butter, just removed it, and I used a flax egg. My adult kids like both recipes better now. I also use dates for cranberry sauce now instead of sugar. Vegan mac and cheese is now the center of the meal instead of turkey or ham. It’s all very good.i will be making your casserole this weekend for everyone to try. Thanks!

I would mix the RAW squash slices in just prior to the final bake...for the extra crunch. But you are definitely making me hungry!

I make a Veg based Lasagna layered with prepped (precooked and drained eggplant and zucchini) in place of pasta. Sauce starts the pan as a light coating. Then, my layers are alternated noodle with finely diced cooked and drained potato, carrot, what veg have you layer. Sprinkle layers with veg Parm (ground cashew, seasoned breadcrumbs nutritional yeast) cheeze. "Noodle" then a light sauce layer. Another layer of cooked mushrooms, onion, garlic drained. Repeat layers until the pan is almost full. Alternative layers- tofu ricotta ) mashed tofu with minced parsley and a bit of garlic powder. Seitan or vegan crumble work for layers, too. My top layer is usually seeded tomato slices alternated with sliced vegan cheese.

Brian and Jessica, I just made your casserole and it was The Bomb! The sauce is amazing. Instead of boiling the squash, I roasted it and the onions in the air-fryer. I also added some Quorn Beefless Crumbles, to give it a quasi meaty texture. Family said it tasted like all the flavors of THanksgiving in one pan. Thank you for the amazing recipe! Looking forward to seeing what other ideas you come up with for this sauce.

My absolute favorite dish for holidays was baked mac n cheese. When we switched to plant-based, we make it now with Violife cheese, but I would love to find a whole-foods recipe that I love just as much. This looks great and I’m glad you found a way to make a healthier version of your mum’s casserole. The only thing I’d add, and I think others may have noted too, is that by boiling the veggies and then straining them, I think you’ve lost a lot of the nutrients. Maybe there’s a way to not do that. Maybe the veggies could be steamed instead. What do you think?

Sounds delicious! Perhaps canned chickpeas or frozen corn could be used as subs for the cashews to give creamy, richness for those with nut allergies.

Silken tofu makes a great mousse (the firm Silken type). Your sauce with a change of the spices would make a great Alfredo sauce. Might be able to sub cannelini beans for the cashews if folks want to go nut free though the ratio would probably have to change. Good job, Krocks! 👍🏻🥗❤️

Cracker Barrel's hash brown casserole(add some nooch for the cheesy taste) or green bean casserole would work great with that sauce. You could add some mushrooms to the sauce after they have been cooked would be nice.

We don't eat cashews or tofu, so I used a can of drained cannelini beans and it turned out great! I think that seasoning mixture would make shoe leather taste good. I can't wait to try it on lots of other things.

My mom made a dish called "Quick Chicken Divan". Over chicken and steamed broccoli was the secret sauce of cream of chicken soup, MAYONNAISE! :-P, and curry powder. The whole thing was buried under a mountain of melted cheddar cheese. I'm going to use your "chick'n" soup, and the curry powder over steamed broccoli and bake with your breadcrumbs. I think it's going to nail it! Thanks!

I used to make a tuna casserole with elbow pasta, peas and cream of mushroom soup. With your soup base, the only thing is to find a replacement for the tuna.

I love squash. I love certain kinds of squash during the winter and during the summer. I used to grow a bumper crop of squash every summer. We also grew eggplant and tomatoes. We could make a lovely ratatouille almost all summer. I would throw in a handful of mozzarella cheese and it seems that I would miss that cheese. It makes me wonder if just once in a blue moon cheese would be OK and we would not be arrested by the plant based police. They would probably make us eat potatoes for a few weeks. LOL. For Thanks giving I love acorn squash haved. I made a cranberry filling too. Yummy. There is not much that would have to change with that. Since we are not eating a turkey, (and I don't miss that part) I think stuffing the acorn squash with a Ezekiel type dressing would be so good. Yum. I always liked all the side dishes at thanksgiving.
