Easier to fillet the fish first. Then skin it , how you skinned it looked awkward and not a good result

I just saw this comment and wanted to clarify. The way he skinned it is actually very common in most sushi shops. While when we normally catch fish and eat it ourselves we skin it first as it is easier, but in sushi first the fish lasts longer with the skin on as you wouldn't always finish such large filets in a matter of a single day. Also the biggest reason to leave the skin on is so that the itamae can easily identify which fish it is while quickly following the customers order. Many of the suzuki family fish such as kue and tai have very similar looking flesh so it is hard to identify without the skin on. Hope this helps :)
