Spanish Squash
2 pounds ground beef
1 small yellow onion, diced
1 green pepper, diced
3 yellow squash, sliced
3 medium tomatoes, diced
1 Tbsp cumin
1 tsp. chili powder
1 tsp. garlic powder
salt and pepper to taste
Brown ground beef in large skillet with onion and green pepper. Add squash, tomatoes, and spices to mixture when beef is about 75% cooked through. Cook until meat/veggies are cooked through/softened.

What a great day to start my day than to listen to our sweet Janice narrate her latest video which I found intriguing. Your whole family is given a wide degree of choice in all the food groups! Rebekah continues to be the most humorous toddler at the table and how she jumps for joy when told she can have a peach after a meal! It’s wonderful to see how all the children pitch in a do their various jobs without being negative. I’m always happy and joyful whenever I set one of your videos especially a longer one like this and I love Anna May’s new glasses as they frame her beautiful face nicely. I had a little giggle. I stand the very same way as Sarah . In the video where she is making the smoothies I noticed she was standing with her feet in an unusual way and it’s exactly how I stand. People always comment when they see me doing it . But it’s so comfortable if you can do it. I know a few others who stand like that too!! It makes me smile.

Eggplant is one of my favorite vegetables. I usually make baba ganush out of it (it is a veggie cream made with tahini and garlic). You can make the tahini at home because it is so much cheaper and also very easy. Eat it with fresh pita bread and I am sure Sarah can make some wonderful flat bread easily ❤Rebecca praying is the sweetest thing I saw today ❤ Your children are beautiful

We had two huge persimmon trees when I was little and both of my grandmothers made huge pans of persimmon pudding. It had all kinds of warm spices in it; cinnamon, nutmeg, a touch of cloves, and a teeny splash of vanilla. And although it was called persimmon pudding, it was actually all mixed up with egg and baked, and then cut into little squares once it was cooled. So it was actually more like persimmon pudding bars. I hadn’t thought about those in years! Sarah’s cake and the other dessert looked amazing! So did your chili, Janice! ❤

Haven't seen watermelon rind pickles since I was a kid 60 years ago. Mom did not leave anything to waste. She was a young wife during depression and she taught me so much. Unfortunately I wasn't always interested 😢 Love to see you passing on old frugal recipes 😅

A potato ricer might be a handy tool for the persimmons. We used one years ago to get the pulp and enjoyed persimmon pudding. The tool can also be used for sweet potatoes and pumpkin and potatoes, basically any cooked veggies for baby food purees.

In the south people would cut open a persimmon seed to predict the weather, it was a old wives tale if you got the knife it would be a very cold winter, the fork would be a milder winter and the spoon would be a wet winter!

A little trick to the cheese grater when it gets full inside to turn the handle the opposite way it will help get the cheese out so they don’t risk cutting their fingers.

Morning, first let me say I'm from an Italian family so eggplant was always plentiful growing up. Secondly, I collect cookbooks and have over 300! But red checkered cook book is what I go back to for everything. It has all the basics everyone needs to cook successfully.

If you slice the persimmons when thry are still firm and dehydrate them they are sweet and fantastic.

Oh no. I love persimmon pudding. We used to preserve them and freeze them in 2 cup batches. We have the metal squasher. This is a great dessert. I recommend this for you all. It is so good!!!

I love fried eggplant, zucchini, and yellow squash. I also like putting eggplant, zucchini, yellow squash, onion, garlic, and lots of butter in heavy aluminum. Roll it up tight and put it in the oven at 350 degrees for 45 to 55 minutes. Yum yum

My mom fed 12 children 14 including her and my dad… it was always a big pot of something always delicious. Fried chicken on Sundays. bread and a picture of water. 5:01 Candy pop corn, honey candy, fudge on special occasions. Simply delicious!!!
