Maybe just me, but few people without some adherence of faith tend to avoid practices (4-8 years of study, etc..) on the simple deluge of curiosity. I cannot recall ever encountering any teacher who would find engaging in a discussion to explain their thinking so difficult, it's exactly what being a teacher is all about. Well, it's hard to be articulate when you don't really know what to say, or when you know what you want to say has a high chance of being met with pushback. I also have a strong feeling that he doesn't know the details of the curriculum because he stopped reading as soon as he saw the word LGBT, making it hard to answer those questions. And obviously he doesn't want to admit he didn't read the details, if that is the case. I think he's just trying to censor himself to come across as a reasonable person but hasn't prepared this phone call in his head.

So it's teaching children to be respectful of differences. Hetrosexuality isn't something that get's prejudiced against by society, no one gets bullied or killed for being straight. So there's not really any need to teach people to be respectful of people being straight, when there's no issue of the contrary in society. And it's something kids grow up with more and see more, so attention doesn't need to be brought to those sort of relationships in the same that LGBT does.

He objects to teaching LGBT concepts, not teaching them specifically. It is similar to how religious doctors can opt out of performing abortions. It is difficult because we cannot reach a stage where religous people are essentially barred from public life. They should not be able to discrimiate against LGBT but I see no reason to force them to participate with spreading values they consider sinful. We need to create a society where people can believe vastly different things yet still get along.
